Now I can't remember how many bad baked cheesecakes I have tried in my lifetime, it has been many. You know the ones, you take a bite and you get this dry, hard to swallow, heavy, dense cheesecake.

Well they don't have to be like that. Years ago I found a recipe for a New York Cheesecake. One that is light, creamy, every bite melt in your mouth delicious. And since then I have modified that recipe to make other cheesecakes, each as good as each other.
