Barbie Princess Ice Cream Cake
I have always loved princesses. I grew up watching all the Disney movies. I have also always loved Barbie. So when I got a daughter of my own, I had to make a princess cake, and the princess had to be Barbie. She loved it.
When I look back on my first attempt, it was not my greatest work, but my daughter loved it, my friends were amazed. Over time I think I have improved in my decorating skills. It is a simple cake to make. Give it a try, your daughter will love it!
Keep an eye out on cheap Barbies with lovely hair. The ones pictured I got
for $10 and they were gorgeous. These also had legs that were easy to remove and put back on, however be careful as some you cannot put back on. If that happens just use it again next time with a different top.

Recipe
This recipe is adapted from the Family Circle Best Ever Kids Party Cakes Cookbook
4 litres of ice cream
2 litre Dolly Varden tin
25cm cake plate or board
Barbie with legs removed
1 Barbie top, or use ribbon to make a top
Decoration:
600ml thick cream
1 tablespoon caster sugar
Food colouring, colour of your choice
Silver cachous, sugar crystals, edible sugared flowers or other hard sugar decorations
Remove the ice cream from the freezer 15 minutes before using, to soften a little.
While the ice cream is softening, make room in your freezer wide enough to fit your 25cm plate in, and high enough to fit in the dolly varden ice cream cake plus the doll.
Line your Dolly Varden tin with cling film, allow it to hang over the sides.

Food colouring, colour of your choice

Remove the ice cream from the freezer 15 minutes before using, to soften a little.
While the ice cream is softening, make room in your freezer wide enough to fit your 25cm plate in, and high enough to fit in the dolly varden ice cream cake plus the doll.
Line your Dolly Varden tin with cling film, allow it to hang over the sides.
Once the ice cream has softened, carefully spoon in the ice cream into the prepared dolly varden tin, pressing down to fill in gaps as you go. When all the ice cream is in, smooth out the top so it is straight, as this will become your base. Cover the ice cream with the overhanging cling film and freeze for at least 6 hours, this can be done a few days before.
Take your Dolly Varden tin out of the freezer, quickly dunk your tin into warm water (not getting any water in the tin) to melt the outside of the ice cream. Move the overhanging cling film to the side, place the cake plate on the Dolly Varden tin and invert the ice cream onto the plate. Remove the Dolly Varden tin, then the cling film. Return the ice cream on the plate to the freezer, position the ice cream in the centre of the plate. Freeze for 1 hour or until set.
Remove the ice cream from the freezer. You now have to quickly dig a small hole with a teaspoon at the top of the ice cream skirt where the Barbie will be placed. I like to wrap the base of the doll with cling film, to keep it clean. You may also like to cover the dolls hair if it is long, makes it easier when decorating the skirt. Now place the Barbie in the skirt, keeping her waist above the ice cream. Use some of the ice cream you scooped out to refill any gaps so the Barbie stays up straight. Return to the freezer for 1 hour or until set.
Put the cream and caster sugar in a medium sized mixing bowl, add a small amount of food colouring. Whip the cream using an electric mixer, keep adding food colouring until you reach the desired colour, keep beating the cream until firm peaks form. Remove the Barbie ice cream from the freezer. Cover the ice cream skirt with the whipped cream, make it smooth or ruffle it up. Decorate with cachous and flowers or whatever decorations you like. Return to the freezer for 1 hour, or until the whipped cream is set.
