Cinnamon Doughnut Puffs
Christmas is over, a few family birthdays are over, leftovers are over, now it is time for me to get back in to the kitchen, relax, and make fun things for the kids while they are still on school holidays.
My daughter loves doughnuts, so while resting in front of the TV post the festive season, these came up on one of the food channels, so I knew I had to make these for her. You could not find an easier recipe to make, a few simple ingredients, mixed together in minutes, baked in 12 minutes and you have doughnuts.
These were delicious, they were easy to make and we loved them.

This is the tin you will need for this recipe.
If you can't find patty tins, you can make these doughnut puffs in 24 x 1/8 cup capacity (30ml) non stick mini muffin tins, just bake them for an extra 3 minutes.
So if you are looking for a simple sweet treat to make for you or your family, look no further, try these, now.

1 1/2 teaspoons baking powder
1/3 cup (75g) caster sugar
125g unsalted butter, melted
1 egg, lightly beaten
2/3 cup (160ml) milk
Cinnamon Sugar Coating:
1/3 cup (75g) white sugar
1/2 teaspoon ground cinnamon
50g unsalted butter, melted
Preheat oven to 180C/160C fan forced. Grease 24 x ⅛-cup-capacity (30ml) non-stick patty tins.
Sift the flour and baking powder into a large bowl. Add the sugar, mix to combine, then make a small well in the middle. Add the egg, milk and melted butter, whisk until smooth.
Divide the mixture between the prepared tins, filling each one just to the top. Bake for 12 minutes or until puffed up and golden brown.
Make the cinnamon sugar coating: place the sugar and cinnamon in a medium bowl and mix to combine. Place the butter in a small saucepan over low heat, stir until melted. Allow to cool a little.
Remove the puffs from the oven and allow to cool in the tins for 1 minute. Carefully move the puffs onto a wire rack and, using a pastry brush, brush them all over with a little of the melted butter while they’re still hot. Toss them in the cinnamon mixture to coat.
Serve the doughnut puffs warm or allow them to cool completely back on the rack.
