Blueberry Smoothie
School day breakfasts can get a bit boring in my house, I'm busy, it's rushed, so it was always something quick and easy, mostly cereal or toast. So this year, to break the cycle of toast or cereal, I now try and throw in different flavoured smoothies.
This mornings smoothie was this blueberry smoothie, so easy, a few ingredients and a blender and my kids get fruit and yoghurt for breakfast that looks pretty and tastes great.
If you forget to freeze the blueberries, just throw in some ice cubes after you blitzed it.
My kids are loving this and I find it fast and easy to make.

1 1/2 cups apple juice
1 banana, halved
1 1/2 cups frozen blueberries
3/4 cup Vanilla Greek yogurt
Fresh blueberries, for garnish optional

Place the apple juice, banana, blueberries and Greek yogurt in a blender.
Blend until completely smooth.
Pour into glasses and serve, topped with blueberries, if desired.
