My top 20 go to recipes when I have guests coming over

So yesterday I posted my most popular recipes from my blog page. Today I'd like to share what I cook for my guests.

These recipes make regular appearances at my parties. These are my go to recipes when I'm planning a party. These are the ones that my guests have loved, or they have asked for the recipe, ones that get talked about. Most of the recipes are quite easy, and as I have made them so often, they take little thinking when making them now, some take a little longer, but they are worth the effort.

My tip, if you like entertaining, is have a diary of your menu plans and guests, so you know who you invited and what you served them, that way you don't repeat yourself next time they come, unless they ask you to.

The sides I've added are my most popular ones, the ones I would serve alongside a barbecue. I've added no desserts to this list as I will give you my families top 20 desserts tomorrow.

Now I never plate up for parties, I am a person that loves to serve food on platters in the centre of the table and allow my guests to go back for seconds.

These recipes are not in any particular order this time. It was just a random list, all are favourites.

1. Spinach and Ricotta Rolls

An absolute favourite with my daughter. These go very quickly once made.

2. Prawn and Corn Cakes

I have been making these for over 10 years now, these go so quickly when I make them, and the recipe is requested quite often. Although I serve it as a starter, these are perfect for lunch also with a green salad.

3. Smoked Salmon Pancake Rolls

There are certain people I always make this for, and even though I don't like repeating myself, I do with these, as I know they don't make them at home, so I make it when they come over. I also like to make enough so I do have leftovers as my oldest son, loves taking them to school for lunch.

This to I have been making for over 10 years now. This I like to serve when people arrive to have with a drink. I absolutely love the freshness of this bruschetta.

6. Fresh Guacamole

I have lovely friends who are Mexican and they have told me that in Mexico you don't add tomatoes to guacamole, but I have to say I love it, so I add it. This dip is always a party favourite. My guests absolutely love it.

7. Oysters (The Way I love Them)

This is my husband's dish and it is my absolute favourite ways of eating oysters. Still natural, just with a little extra flavour. I love when the roe pops in your mouth. Absolutely delicious.

This one is for my non drinking friends. Quite often non drinkers get overlooked, so I always make a little effort to make them have a drink they will enjoy also. Kids love this one also.

I make this when I only have one or two families over. Prepare to get messy, you will be licking your fingers and you won't look attractive eating it. But you will enjoy every minute of this dish.

20. Pork Schnitzels in Lemon and Parsley

These pork schnitzels are amazing. Absolutely love the crumbs on this. I usually make this for small parties as it is a dish you need to serve hot and I try not to be in the kitchen too much once guests have arrived.

Quick and Easy Plum Tart

While we are in plum season, here is another quick and easy plum recipe. This one has only three ingredients and is so simple to make, tastes lovely and it looks beautiful.

Now as this recipe only has three ingredients you want good quality ingredients. You can use whatever butter puff pastry you like or can afford, but for some things like this I like to use Careme pastry.

Now remember I am not paid to say this, I just really love this brand of pastry. It tastes amazing and puffs up like no other pastry I have tried. It is expensive, but for some things like this, it is worth it.

The plums should be hard, as if they are too soft, they will not slice very well. To remove the stone, you can either slice around the stone or you can slice it half, then try to twist the two halves apart, then slice.

This dessert is quick and easy, we loved it, hope you do to.

Recipe

Recipe adapted from The Australian Women's Weekly Christmas Entertaining Cookbook

Serves 6

1 sheet Careme All Butter Puff pastry, thawed, follow instructions on packet
4 medium plums (about 330g), stones removed, sliced
55g icing sugar


Preheat your oven to 180C/160C fan forced.

Line an oven tray with baking paper.

Place the pastry on your prepared tray. When thawed, fold 1cm of the pastry edge over to create a border.

Place the plum slices onto your pastry, but don't place plums on the border. Sift 2 tablespoons of the icing sugar onto your plums.

Bake for 20 minutes or until the pastry has puffed and lightly browned.

Dust with remaining sifted icing sugar.

Serve with vanilla ice cream, chocolate ice cream or whipped cream.

Salt and Pepper Squid

My family love these. When I make this my kids get so excited.

I've put it in the party food section but quite often, this is a light dinner or lunch in our house. This is so simple to make, and so delicious. It is great party food as it is very quick to make from start to finish.

Just beware, every now and then they do splatter the oil about your kitchen while frying.

I do not remove the skin off of the squid (as many TV chefs do), for me that is where most of the flavour comes from, plus I love the colour it gives when cooked.

Recipe

Serves 3-4

1kg fresh squid
2 cups plain flour
1 1/2 - 2 tablespoons salt
1 1/2 - 2 tablespoon white pepper
Sunflower oil, for frying

Lemon Aioli:
1 1/2 cups whole egg mayonnaise
2 teaspoons finely grated lemon rind
2 tablespoons lemon juice
​1 clove garlic, crushed 

​Serve with Lemon Wedges and Lemon Aioli or mayonnaise.

Firstly you need to clean the squid. Grab the body in one hand and the head and tentacles in the other. Pull firmly to separate. From the tentacle half, cut away the head, but keep the tentacles. Pull the quill, the transparent cartilage, from inside the body of the squid, discard. Remove and discard any white membrane that is inside the body.

Cut the tentacles in half. Slice the squid hood into 1/2 - 1cm slices.

Mix together the flour, salt and pepper in a bowl. The flour must taste salty and peppery. Keep adding salt and pepper until you are happy with the taste.

Make the lemon aioli: Combine the mayonnaise, lemon rind, lemon juice and garlic in a bowl, mix to combine. Set aside until needed.

Heat oil in a large frying pan, until hot. I like to deep fry them, makes it quicker to cook. 

Working in batches, dust the squid in the flour mix, add to the hot oil. If deep frying cook for 3-4 minutes. If your squid are not fully submerged in the oil, turn halfway through cooking time.

Drain on paper towels. Taste for seasoning, add more, if needed.

​Serve immediately as finger food with ​lemon wedges and lemon aioli or mayonnaise. Or serve with a green salad for lunch or dinner. ​

Chicken Wonton Soup

I love trying new things, I love experimenting in the kitchen. Some recipes I love immediately, some I have to tweak a little. This is one I tweaked.

The first time I made this soup, I loved the wontons, they were very flavoursome, but I thought the soup lacked flavour. So then I tried another recipe, but I used the same wonton filling, why change something I thought was great. This time I was happy with the soup as well.

So here I have combined two recipes. The first soup had carrots, mushrooms and cabbage, the second soup didn't, but I liked having carrots, mushrooms and cabbage so I added them back in to the second recipe.

Wrapping the wontons was easy enough, with this being my first attempt at it, I didn't find it difficult at all (once I figured out how I liked them). If you have any leftover filling, just freeze it for another time, or with wet hands form mini meatballs, and add it to the soup when adding the wontons, they don't fall apart. 

New Note: It's no longer my first time, I've been making this soup for years now. I'm going to add on two more ways to make wontons, all easy, just takes a bit of practice.

My husband would decrease the amount of ginger in the wonton filling, while my kids and I loved it, so if you don't like a lot of ginger, simply decrease the amount to suit your tastebuds.

As for the Sambal Oelek, this was my first taste of it, so I will mention, if this is your first try, add a small amount, it is really spicy, but do add it, it really adds to the overall flavour of the soup.

I also like to break the wontons in my bowl when eating them, as they are large, but more importantly the filling adds even more flavour to the soup when it is broken in the soup.

This is a lovely light soup, very fragrant, it was a hit with my family.

Recipe

Wontons:
250g chicken mince
2-3cm piece fresh ginger, finely grated
1 clove garlic, crushed
2 spring onions, finely chopped
2 tablespoons water chestnuts, finely chopped
2 teaspoons sherry
2 teaspoons soy sauce
24 Wonton wrappers

Soup:
2 litres salt reduced chicken stock
1 tablespoon salt reduced soy sauce
2cm piece fresh ginger, thinly sliced
2 garlic cloves, thinly sliced
 1 cinnamon stick
1 star anise
​1 small red chilli, optional
1 carrot, cut into thin sticks
150g shitake mushrooms, sliced
1 bunch bok choy, washed, sliced lengthways
2 cups shredded Chinese cabbage
1 spring onion, thinly sliced diagonally
1/4 cup fresh coriander leaves
1/4 cup fresh mint leaves
Sambal oelek, to serve

Wontons: Place chicken mince, ginger, garlic, spring onion, water chestnuts, sherry and soy sauce in a bowl. Mix well to combine.

Now I'm going to show you three ways to make wontons.

First up we'll call this one the Envelope

​Lay a wonton out on a clean surface. Spoon about 1 teaspoon of the mince mixture in the centre of the wrapper. Using your finger, spread a little cold water around the edge of the wonton. Fold wrapper over diagonally to enclose filling and form a triangle. Now from the mince mixture press the wonton toward the edges, making sure there is no air pockets around the mince mixture. If you leave air pockets, the wontons can open during the cooking process. So gently seal the edges from the mince mixture out. Make sure the edges are pressed together to seal. 

Now lightly moisten with water the two corners of the folded edge. Bring the two corners of the folded edge together and press to seal. You now have a tortellini shape. (You can simply fold in a rectangle shape, as seen below also, but it doesn't look very nice). Place on a baking tray lined with baking paper. Repeat with remaining wrappers and mince mixture. Once done refrigerate until needed.

Second option is the Rectangle Ingot.

So gently seal the edges from the mince mixture out. Make sure the edges are pressed together to seal. 

Now lightly moisten with water the underside of the left bottom corner of the folded edge. Bring the two corners of the folded edge together, squeezing the filling, gently,  and press to seal, fold up the top edge. You now have a tortellini shape. Place on a baking tray lined with baking paper. Repeat with remaining wrappers and mince mixture. Once done refrigerate until needed.

The third option is a take on my Gyoza wrapping:

You will need to watch the video for this one as it will help, the only main difference is because the wrapper is square here, I don't add the mince to centre in this case, like in the video, add it to the left of centre, about 1cm from the edge. 

But I will try and describe the process here: Place one heaped teaspoon of pork mixture to the left of centre, 1cm from the edge, of one wrapper, dip your finger in water and run it around the edges of the wonton wrapper. Pleat to seal, to pleat you pick up the wonton in your left hand and place it in your palm, with the filling on your thumb side, now use your index finger push in the dough, towards the filling, then using your right hand start to pleat the wonton, around the filling. As it is rectangular shape, it will give you longer and shorter edges and near the end you just squeeze it to enclose the filling. No two look alike for me, but in the soup, they all look amazing. Place on baking paper lined tray. Repeat with remaining mixture and wrappers. Once done refrigerate until needed.

Place stock, soy sauce, ginger, garlic, cinnamon, star anise and chilli (if using) in a large saucepan over medium-high heat. Cover. Bring to the boil. Reduce the heat to low. Simmer for 10 minutes for flavours to develop. Remove from heat. Strain. Discard ginger, garlic, cinnamon and star anise. Return stock to pan, bring back to a simmer.
Separate bok choy leaves from stems. Chop stems into 3 pieces. Roughly chop leaves.

Add carrots, bok choy stems and wontons to the stock, simmer, uncovered for 5 minutes. Add the bok choy leaves, mushrooms and cabbage. Cook for 2 minutes or until leaves have wilted and cabbage is tender.

Ladle into bowls. Sprinkle over spring onion, coriander and mint. Serve with sambal oelek.

Plum Crumbles

Recipes-I love sharing recipes, I love finding recipes, I love trying recipes and then I love sharing recipes so that others can try them to. I think recipes need to be shared.

I love cookbooks, I love buying cookbooks and magazines, I love going into bookshops and flicking through the pages of a new cookbook and seeing what new and exciting thing I can cook my family. This recipe for instance, came from an Australian Women's Weekly Annual Christmas Cookbook I bought in 2012. I have never since buying it made something from it, then one day I picked it up, marked 6 recipes I wanted to try in the next fortnight and then started cooking them one by one. So far I have made 5, all are worthy of posting on What's Cooking Ella as they have been absolutely delicious. I even found my Flourless Chocolate, Pecan and Raspberry torte in the book, which is probably my favourite flourless chocolate cake ever. I had originally made it from a magazine clipping I had kept from an AWW magazine, now I have it in a book, and I have marked the page with a 'love'.

I love blogging, I love telling you short stories about the recipes and about my family. I don't get paid for blogging, sometimes I wish I was as it is time consuming posting recipes, but in all honesty, if I never made any money from this, that is okay with me, because I love it. I love my little food diary, I love that my kids go through it sometimes and tell me what to cook from it, I love when I see my husband has liked a Facebook photo, I love when I forget my shopping list at home, I can just go to my website , find the recipe I need and continue shopping. And as for the photos, everything is done in real time. I cook it, I take a quick photo of it, and then we eat it. There is no food stylist, this is my reality.

As for my followers, I love hearing from you, I love when people send me photos or comment on my blog or my Facebook page about a recipe they have tried. I love knowing that people are trying the food that my family loves. I don't always like writing, sometimes this is the hardest part. Today however, my son woke me up at 3am, he went back to sleep, but I cannot, so I'm blogging and I feel like writing. I probably should get onto the recipe though.

So the Plum Crumble, it is plum season at the moment, my 8 year old absolutely loves plums, so I made this dessert with him in mind, although I knew we would all love it. The first time I tried this recipe I actually made it with nectarines, as that is all I had in the house. It was delicious, slightly sweet for me, so I have since decreased the sugar a little, but if you prefer nectarines to plums, feel free to use nectarines. The second time I forgot to put on my oven timer and forgot about them, so I overcooked them, the plums turned into a jam consistency, they tasted great, but they collapsed and looked a bit of a mess. So the third time, I had the right ingredient, I turned on my timer and they were perfect. I actually prefer plums to nectarines, as I find them tarter, so you get a sweet and sour feel with this recipe.

The ice cream for me is a must as I love crumble with ice cream, but feel free to serve it with a lovely custard also.

These individual desserts are delicious and so easy to make. They are fast to prepare and just perfect in summer. You may associate crumbles with winter, but I love them in summer, just allow them to cool a little, plus plums are around in summer, so it is the only time we can enjoy them.

Now you can eat them hot from the oven, but if you have any leftover, they are delicious the next day when cold.

Also with the ovenproof dishes, I use what I have at home, that is why I get 7, but if you use smaller or larger ones you can make more or less of them. You can also make one large one rather than individual ones.

I have decreased the sugar by 10g for this recipe. If you taste your plums and they are very tart, increase the sugar by 10g.

Recipe

Recipe adapted from The Australian Women's Weekly Christmas Entertaining Cookbook

Makes 6-7

10 small plums (about 800g)
65g caster sugar

Crumble Topping:
100g flour
100g caster sugar
60g cold unsalted butter
60g rolled oats


Preheat your oven to 180C/160C fan forced.

You can halve the plums, remove the stones and then slice the plums, but I prefer to cut wedges out of the plums around the stone, this way you don't squish the fruit as much. Discard the stones, place the plum slices in a large bowl. Add the caster sugar, mix well to combine. Allow to sit for 10 minutes, while you get on with the crumble topping.

Crumble Topping: In a small food processor, place the flour, caster sugar and cold butter. Blitz for 5-10 seconds until well mixed and there are no lumps of butter. Stir through the rolled outs.

After 10 minutes has passed, give the plums a quick stir to ensure they are well coated with the sugar. Then spoon the plums into the base of seven x 175ml  (3/4 cup) ovenproof dishes or a 1 litre (4 cup) ovenproof dish.

Top the plums with the crumble mixture, place the dishes on an oven tray.

Bake for about 30 minutes or until the crumble is golden and the juices are bubbling over the side.
Serve warm with ice cream, whipped cream or custard.

Marinated Mini Bocconcini with Basil and Prosciutto

I love when the kids are on school holidays, I tend to feel relaxed and am able to spend time on me. Today was the perfect day, I spent the morning in a garden centre, posted a few recipes, cooked a little, I even snuck in a nap, absolute bliss.

This recipe is something I made recently. Originally I made something similar, an unmarinated version of this, it is on my website called Bocconcini, Basil and Prosciutto Balls, I absolutely love these they are perfect finger food at parties, they are perfect snack foods if dinner is running late and you need to eat something, I quite often make it for my husband when he gets home from work, to have with drinks while waiting for dinner.

This version is a marinated version. As we have been growing long green chillies and basil in our garden, when I came across this recipe, I knew I had to try it.

I love these, they are absolutely delicious and so easy to make. The long green chilli adds flavour more than it adds heat.

For my next party I may be making a plate of these marinated ones and a plate of unmarinated ones, as I love both, I'll see what my guests prefer.

Recipe

Recipe adapted from The Australian Women's Weekly Christmas Entertaining Cookbook

Makes 20

200g baby bocconcini cheese (you will need 20 pieces)
1 clove garlic, crushed
1 fresh long green chilli, seeded, chopped finely
2 tablespoons olive oil
5 slices thinly sliced prosciutto
20-25 fresh basil leaves


In a medium sized bowl add the bocconcini, garlic, chilli and olive oil. Stir gently, allow to marinate for 30 minutes.

Halve the prosciutto slices crossways then halve lengthways, you need 4 strips per piece of prosciutto.

Place a strip of prosciutto on a work surface, place a basil leaf on one end of the prosciutto. Remove one bocconcini cheese from the marinade (reserve marinade) and place bocconcini on your basil leaf. Roll up the prosciutto slice to wrap it around the bocconcini. Secure with a toothpick. Place on your serving plate. Repeat until you have made 20 pieces.

Just before serving drizzle with the reserved marinade.

Lime and Mint Punch

We love growing our own fruit and vegetables. Eating from your own garden is something we really love. This drink I decided to make as we grow mint, and it grows like crazy.

This is great for parties as you can make a large quantity with no cocktail shaker in sight. This is basically a version of a Mojito (which I have posted before), but this is made for large quantities and is very easy.

I made only two glasses to try for me and my husband, but this is definitely something I will be making for parties that I have in the future. 

Super easy, super tasty, very refreshing.

Recipe

Recipe adapted from The Australian Women's Weekly Christmas Entertaining Cookbook

Serves 10

12 medium limes, washed
220g caster sugar
300ml golden or white rum
30 mint leaves
1.5 litres (6 cups) sparkling mineral water, chilled
Ice, for serving



Quarter six of the limes, place them in a large jug. Add the sugar. Now using a muddling stick or the base of a rolling pin, crush the limes and the sugar together.

Juice the remaining six limes, add the juice to your jug. Now add the rum and mint. Add the mineral water, to taste.

To serve, fill your glasses with ice and pour over the punch.

Limoncello Blush

My husband made up this one. There was no cold white wine in the house, so he got creative.

There was a bottle of Limoncello in the freezer and some Cran-Pomegranate juice in the fridge. Put the two together and you have a lovely refreshing little drink.

Recipe

30ml limoncello
90ml cranberry juice
Ice cubes



Place 3-4 ice cubes in a glass. Add the Limoncello. Top with the cran-pomegranate juice.

Serve immediately.

Taramasalata Bites

Okay there is no real cooking going on here, this is just three store bought ingredients put together that make one delicious bite sized canapé. Perfect to have with drinks at a party.

So this all started when I went into my local deli in Bondi Junction and my lovely deli guy Andre was serving me and I asked him what Taramasalata is (Taramasalata is a Greek and Turkish meze made from tarama, the salted and cured roe of the cod, carp, or grey mullet mixed with olive oil, lemon juice, and a starchy base of bread or potatoes, or sometimes almonds, Wikipedia is great for these things). Anyway, after telling me it was made from fish roe, Andre gave me some to try. I loved it, I just didn't know what to do with it.

So along I go to a party and my posh friend Brooke was there (I've mentioned posh Brooke before) and she brought along these canapés. Well I loved them, my husband loved them, and now I knew what to do with the taramasalata that I loved.

So off to the deli I go, I do love Norton St Deli in Bondi Junction (love the deli people, very friendly, very helpful) and I bought the taramasalata and the mini toasts, bought the seaweed from the sushi place across from it and off I went and I made this.

Sadly Norton St Deli no longer exists-how you miss things that were amazing.

We love this, I now buy this regularly and make it for my husband when he gets home from work to have with a drink if dinner is going to be late. I've served it at parties, it is so easy and so tasty.

Next time you see taramasalata at your local deli, try it, and give these a go, they are so good.

Recipe

Makes 20 canapes

1 large serving spoonful taramasalata, about 150g
1 packet seaweed
1 packet mini toasts


Place some taramasalata on the mini toasts. I use the back of a teaspoon to spread it on. Don't be too stingy, you want to taste it.

Top with some seaweed. Serve immediately.
