Marinated Mini Bocconcini with Basil and Prosciutto
I love when the kids are on school holidays, I tend to feel relaxed and am able to spend time on me. Today was the perfect day, I spent the morning in a garden centre, posted a few recipes, cooked a little, I even snuck in a nap, absolute bliss.
This recipe is something I made recently. Originally I made something similar, an unmarinated version of this, it is on my website called Bocconcini, Basil and Prosciutto Balls, I absolutely love these they are perfect finger food at parties, they are perfect snack foods if dinner is running late and you need to eat something, I quite often make it for my husband when he gets home from work, to have with drinks while waiting for dinner.
This version is a marinated version. As we have been growing long green chillies and basil in our garden, when I came across this recipe, I knew I had to try it.
I love these, they are absolutely delicious and so easy to make. The long green chilli adds flavour more than it adds heat.
For my next party I may be making a plate of these marinated ones and a plate of unmarinated ones, as I love both, I'll see what my guests prefer.

Recipe
Recipe adapted from The Australian Women's Weekly Christmas Entertaining Cookbook
Makes 20
200g baby bocconcini cheese (you will need 20 pieces)
1 clove garlic, crushed
1 fresh long green chilli, seeded, chopped finely
2 tablespoons olive oil
5 slices thinly sliced prosciutto
20-25 fresh basil leaves

In a medium sized bowl add the bocconcini, garlic, chilli and olive oil. Stir gently, allow to marinate for 30 minutes.
Halve the prosciutto slices crossways then halve lengthways, you need 4 strips per piece of prosciutto.

Place a strip of prosciutto on a work surface, place a basil leaf on one end of the prosciutto. Remove one bocconcini cheese from the marinade (reserve marinade) and place bocconcini on your basil leaf. Roll up the prosciutto slice to wrap it around the bocconcini. Secure with a toothpick. Place on your serving plate. Repeat until you have made 20 pieces.
Just before serving drizzle with the reserved marinade.
