Croatian Bean and Barley Soup with Baked Pork
Every Tuesday in my house is Croatian Tuesday, it is the one day in the week I have to cook Croatian food. We love Croatian Tuesdays as I like to try and make something new, something I haven't made before.
This past Tuesday I decided to make Ričet (pronounced Richet). Ričet is something I had made many many years ago that I simply forgot about and had lost the recipe (during a recent clean up, I found the recipe). Now although not a new recipe, it's been so many years since I made this and no one remembers it.
Ričet is a dish made from beans and barley cooked with smoked robs or smoked sausages or smoked bacon. It is considered a peasant dish as from a small amount of smoked meats and beans and barley the people in the villages in the past could feed their family with this and it didn't cost a fortune. This is something my mother would have had a little girl. It always amazes me the food people came up with pre cookbooks and recipes online.
We loved this. My family absolutely love this soup. Their is nothing peasant about this dish, these days we make food like this as it is delicious.
Some call Ričet a soup, some call it a stew, but it both to me, depends on how I serve it. I'll explain:
Now this is a weird dish as it is technically two different meals that you can combine or eat separately. You can eat just the soup, you could just eat the roast pork and vegetables, you can eat the roast pork like a stew. My daughter for instance loves the soup, she does not eat the pork with it. My son enjoyed the soup but then wanted to eat roast pork with the vegetables. I tried the soup with the roast pork and it worked, it was like a stew, I did love it.
I added pasta into the recipe as we love it, but it is not traditionally in the recipe.
So today I will write this up as I made it, but if you want to make just the soup, ignore the roast, but you might want to add extra smoked ribs. If you are having guests over and you need something to go with the soup, make the roast, if you've never roasted pork neck, just make the roast pork with the vegetables.
With regards to beans, make sure they are not old or past their used by date or you will put in a lot of effort and they will never cook properly.
This is comfort food, perfect in cooler days, something definitely worth trying.
