All Day Breakfast
After a busy day out with my boys, I came home and had to think quick about what to make for dinner. As it was just me and the boys at home (husband and daughter were on a holiday visiting my in-laws) dinner was going to be simple.
I do take out sometimes, but I am not a huge fan, only because I find it quite expensive, plus I do like to cook.
Anyway after looking in my fridge, I had bacon, I had eggs, I had 2 chorizo sausages and I had tomatoes. I had seen and kept a clipping of this recipe, so I thought, why not.
My boys loved it, they loved having breakfast for dinner. I loved it, as it was great and was so easy to make.
The sausages can be whatever sausages you like, fresh or smoked, kielbasa for instance is delicious here.
Unfortunately I don't know what magazine the clipping came from to give it the credit it deserves.
Give this a go you won't be disappointed.

1 tablespoon olive oil
2 chorizo sausages, thickly sliced
4 rashers bacon
10 cherry tomatoes
4 eggs

Preheat your oven to 220C/200C fan forced.
Add the oil to an ovenproof frying pan or shallow roasting tin. Toss in the sausages, spreading them around the pan. Drape the bacon around the pan. Roast for 15-20 minutes, until both are starting to brown and sizzle.

Remove pan from the oven, if there is a lot of oil in the pan, discard most of it, as you only want a little.
Move the bacon and sausages around so they cook evenly.
Add the tomatoes to the pan.
Make 4 gaps for the eggs, crack an egg into each gap.
Place back in the oven for a further 5-6 minutes or until the whites are just set and the tomatoes have softened.
Serve with toasted crusty bread.
