Sugar Syrup
Here is a simple sugar syrup recipe that I use in my cocktails.
It keeps well in the refrigerator for about 3-4 weeks.
To make a vanilla simple syrup, once you remove the syrup from the heat, add a lengthwise split vanilla bean to the syrup. Let it steep for several hours.

Makes 250ml-300ml
250ml white sugar
250ml cold water
1 vanilla bean, split lengthwise, optional

Combine sugar and water in a medium sized saucepan over a medium heat.
Cook, stirring, occasionally, for 10 minutes or until the water comes to the boil and the sugar is dissolved.
Simmer gently for 5-10 minutes or until the syrup thickens slightly.
Remove from heat, cool, then refrigerate until cold.
