Berry and Apple Slice
This recipe came from my mum's youngest sister 'Teta Marica', she is my cookbook aunt. Like me she is constantly trying new things. Quite often I'll ask her for a recipe, and she is always happy to share.
This slice is delicious, it is jam packed full of fresh fruit. This is an absolute family favourite in our house. I don't know what it is about buttermilk, but I seem to love cakes that have buttermilk in it, it seems to cut through some of the sweetness in cakes, I don't know, but I love it.
You definitely need the apple in this slice, but the berries are interchangeable, I have tried many different versions of this slice over the years, I've used strawberries, blueberries, blackberries, mulberries, raspberries... It is a great summer recipe as berries are in season and quite cheap. Don't use frozen berries, as they don't work as well.

When baking make sure you bake it until it is browned on top like in my photo and cooked through. The slice has such a large quantity of fruit in it, it will not be baked right if you don't bake it as pictured. It needs to feel 'baked' not be soft in the middle when baked. Allow to cool completely before slicing.

Recipe
Recipe adapted from an Australian Women's Weekly Cookbook
Serves 12
150g unsalted butter, softened
1 1/3 cups caster sugar
2 eggs
2 cups self raising flour
2/3 cup buttermilk
1 teaspoon vanilla extract
2 large granny smith apples, peeled and cored
150g blueberries
150g blackberries
Icing sugar, for dusting

Preheat oven to 180C/160C fan forced. Grease and line with baking paper a 32cm x 23cm baking dish.
In a large mixing bowl add the butter and sugar and beat with electric beaters until light and fluffy. Add one egg and beat until just combined. Add the other egg and vanilla and beat until mixed in well.
Add the buttermilk and flour. Using the slowest speed, mix until just combined, or mix it in with a spoon.
Cut the peeled and cored apple into quarters, thinly slice.
Spread the base of the baking dish with some of the cake mix. It needs to be 5mm thick layer.
In a large mixing bowl add the butter and sugar and beat with electric beaters until light and fluffy. Add one egg and beat until just combined. Add the other egg and vanilla and beat until mixed in well.
Add the buttermilk and flour. Using the slowest speed, mix until just combined, or mix it in with a spoon.

Arrange the sliced apple neatly on top of the cake mixture.
Spread the remaining cake mix on top of the apples, spread evenly.
Scatter over all of the berries. No need to press them down.

Place it in the preheated oven and bake for 45-50 minutes, until browned evenly and cooked through.
Cool the cake in the tin.

Dust with icing sugar. Slice once completely cooled, or it will break up.
