Meatzza

Meatzza, what can I say about this one, it looks like a pizza, yet its not a pizza. What is it, it is a giant meatball pressed out flat to fit a pizza tin, topped with tomatoes and mozzarella and baked like a pizza. Does it taste great, it does, my kids love this. Do I love it, I actually do.

I first made this as I had mince in the fridge to make a Bolognese sauce, I just didn't have the time to make my Bolognese sauce, so, I remembered seeing this recipe and thought why not. It really is tasty, honestly. It is a great midweek meal as it is fast to throw together and bakes quite quickly.

I have only made it with a margherita type topping, but according to Nigella you can top it with any toppings you like.

This is seriously tasty, it is great when kids come over, a bit of a novelty dish, which you should try at least once, just for the fun of it. But my kids request this regularly now, as it is a hit with them.

What we also love is when you press the mince mixture out into your tin, push it up the sides a little, these bits don't get tomato on it and what happens is the mince crisps up and a crust form, this is delicious.

Now you can use baking paper, to save up on cleaning, but the mince mixture shrinks a little if you do so, now that doesn't affect the flavour, but it doesn't look as pretty. Without baking paper, and using a non stick pan, it sticks a little, but if you use a cake slice, it gives eventually, just be gentle with it. Your choice either way, try with baking paper first, see if you like the flavour.

Now I use pork and veal mince as it is light in flavour and it is my favourite mince, but you can use beef or chicken, whatever flavours you like really. I also use bocconcini cheese instead of mozzarella when I have it in the house and need to use it up. It really is up to you on the type of mince or cheese you like, adjust the flavours to suit your family.


So if you are looking for a quick, easy, cheap mid week meal that is fun, this one is for you.

Recipe

Recipe adapted from Nigella Lawson's cookbook 'Nigellissima'

Serves 4-6

500g pork and veal mince
3 x 15ml tablespoons grated parmesan
3 x 15ml tablespoons breadcrumbs
3 x 15ml tablespoons chopped fresh parsley
2 eggs, lightly beaten
1 clove garlic, peeled
Salt and pepper, to taste
Oil Spray, for greasing
1 x 400g tin chopped tomatoes, drained
1 teaspoon garlic oil
1 teaspoon dried oregano
1 x 125g ball mozzarella, halved then sliced
Few leaves fresh basil


Preheat the oven to 220C/200C fan forced.

Place a sieve over a bowl and pour the tin of tomatoes into the sieve to drain off any excess liquid while you prepare the mince base. 

In a large bowl add the mince, parmesan, breadcrumbs, parsley and eggs. Grate in the garlic, season with salt and pepper. Now lightly mix it all together to combine, but don't over work it, you want it light, not dense and compacted.

Spray or brush a 28cm round baking tin with oil. Place the mince mixture into the tin and spread out pressing the mixture lightly with your fingers to cover the base of the tin like a pizza base, allow it to go up the sides a little.

Place the drained tomato into a bowl, discard the liquid. Add the garlic oil and oregano to the tomatoes and season with a little salt and pepper. Now spread the tomato sauce over your mince base. Arrange the mozzarella slices on top.

Place in your preheated oven for 20-25 minutes, or until the meat is cooked through and lightly set and the mozzarella melted.

Remove from the oven, let it sit for 5 minutes, then scatter over the fresh basil leaves.

Serve it up by bringing it to the table whole and slice up into wedges, like a pizza.

Cookies and Cream Cheesecake

I have tried many a cookies and cream cheesecakes in the past and most have been too sweet for my liking, there was just something about them I didn't like, so I would move on to the next recipe and the next recipe until now. Finally I have found one that although is decadent and rich, it's just not over the top sweet like the others I have tried.

This one is creamy, it is light, it is tasty. I'm pretty sure I won't be looking to find anymore cookies and cream cheesecake recipes, this is it, this one I am happy with.

Now I have modified this recipe from the original recipe I found, I reduced the amount of butter in the base, I reduced the amount of white chocolate, I reduced the amount of gelatine and I have made it in a larger pan than the one suggested in the original recipe.

Now I reduced the amount of butter in the base as it was just too greasy, you just need enough butter to hold everything together. I reduced the white chocolate as originally I found it too rich. I reduced the amount of gelatine as I just thought it didn't need as much, and I was right. And although I love it as is, next time I make it, I will reduce the gelatine again, just to see what happens, if it sets and works with less gelatine, I'll let you know.

Now for the pan size, when I first made this the suggested pan size was 20x 30cm. I had one that was a slice tin in that size and well there was no way the mixture was going to fit into this pan size, so luckily I had a few extra Oreos that I blitzed up and made a small round (19cm) cheesecake with the extra Oreos and the leftover cream cheese mixture that couldn't fit in the pan. So now I use a larger pan, and it fits perfectly. Even if I had a 20cm x 30cm baking tin with higher sides, the cheesecake would have been too high anyway, so that size tin was never going to work for me.

You could also easily make this in a 23cm or 25cm round springform tin  and serve it as a round cheesecake, but as the cheesecake is rich, I find small squares better for me.

When adding the gelatine, make sure you pour it into a warm jug before you add it to the cheese mixture, it will help with the pouring with the mixer on, I tend to make a mess if I try pouring it straight from the bowl. And if you have a splatter guard with your mixer, use it when adding the gelatine, it splatters a little and cleaning up gelatine is not that much fun. And if you do make a mess, just let it set on the bench, once set it is easier to clean than when wet. But don't let this deter you from making the cheesecake, I'm just giving you a heads up on things I did wrong to stop you from doing the same.

You can make this with a hand held mixer, it is just easier with a freestanding one.

Below I state it makes 20-30 slices. I like the slices smaller for parties, so I get at least 30 slices out of it, but you can serve them larger as a dessert and you will get 20 slices out of it. So that is up to you, how you will serve it up.

So here it is, my favourite cookies and cream cheesecake, hope you love it as much as I do.

Recipe

Makes 20-30 slices

400g Oreo biscuits
60g unsalted butter, melted
750g Philadelphia cream cheese, room temperature
1 cup caster sugar
1 teaspoon vanilla extract
2 x 300ml thickened cream
5 teaspoons powdered gelatine
350g white chocolate, melted


Line a 22cm x 32cm (base measurement) baking tin with baking paper, make sure all sides overhang a little, (especially if using a slice tin as the cheesecake goes up the sides just past the rim of the tin, the baking paper will keep the cream cheese in place).

Place 250g of the Oreo biscuits into a food processor and process to fine crumbs. Add the melted butter and mix to combine.

Press the biscuit crumbs into your prepared tin, you will just have enough crumbs for this sized tin, so spread it out evenly. Refrigerate while you make the filling.


Place the gelatine in a bowl with 1/2 cup water. Place the bowl over a small pan of simmering water, stirring occasionally, until the gelatine has dissolved, remove from heat, cool slightly.


Place the cream cheese, sugar and vanilla extract in the large bowl of your freestanding mixer using the paddle attachment. Beat until smooth, scrape the bowl at least once to make sure it is all mixed well.

Pour in the cream, and continue beating until smooth and combined. Again, scrape down the sides and base of your bowl to ensure it is mixed well.


On the lowest speed, slowly drizzle in the gelatine mixture, then add in the melted white chocolate. 

Using your hands, chop up the remaining 150g Oreos and stir through the cream cheese mixture. Carefully pour over your prepared base, smooth the surface and place in the refrigerator to set for an hour. After an hour, you can cover with cling film as the top would have set, then leave in the refrigerator for at least 4 hours to set properly.

Cut into slices and serve.

Tagliata For Two

My husband went to the butcher's on the weekend and bought too much as per normal. Now I do freeze meat quite often but I don't really like to freeze steaks as such, I prefer to eat them fresh once they come home from the butchers. So after he made a barbecue on the weekend, I had three steaks left over. At first my husband suggested a beef and broccoli stir fry, but I was not in the mood for that, so I suggested I would try something new.

I have a very large collection of cookbooks and have decided I am going to pick one cookbook per week and use that book when trying something new for that week, then change books. This weeks book is Nigella Lawson's Nigellissima. So far I am loving this book, I have tried the Meatzza, absolutely delicious. The Chocolate Hazelnut Cheesecake, brilliant, the Chocolate Olive Oil Cake which is great for those that can't have dairy or gluten, absolutely delicious, and tonight I am trying an Italian Apple Pie. 

This steak recipe is in that book, here I learnt that you pronounce Tagliata like this Tallyata and that tagliare simply means to cut.

This is how I like to eat a steak, I have never really liked getting a big steak on a plate and eating it myself, I love thin slices of rare steak on a shared platter with either a delicious rub, or like this with a sort of dressing, served with a salad, absolutely delicious.

Here you cook the steak for 2 minutes in a griddle pan on each side (cook your steak longer if you prefer, that is totally up to you, this is just how my family love it). Then you place the steaks in the prepared dressing, slice it up, add the tomatoes to the dressing, that is it. Then serve with some crusty Italian bread to soak up the dressing and dinner is done, very easy and tastes amazing. I love the simplicity of this dish.

Take out the steaks out of the refrigerator an hour before cooking them, they are best cooked when not fridge cold. If by chance you have forgotten to do this, cook the steaks a minute longer on each side.

If you don't want to fry the steak indoors, this can also be made after the meat has been cooked on the barbecue, I know I'll be having my steak like this next time we barbecue.

Now the recipe below is for two as the name suggests, but as I had three steaks I tripled everything except the tomatoes, as I only had one punnet at home, but in all honesty three punnets would have been too much, especially as I used smaller grape tomatoes. So adjust things to your liking if doubling the recipe. I loved the chilli in this it added a nice heat that the dish needed, but you put in what you can handle. I did serve it with a salad but in all honesty, the tomatoes add the salad element, so you don't have to bother with a salad.

The recipe states to use sirloin steak, but I have also made this with new york steak and it was equally delicious.

So if you are looking at sprucing up a steak, this dish will do it. Super easy, super tasty, I know I'll be making this again and again.

Serves 2

2 x 15ml tablespoons extra virgin olive oil, plus some for oiling
1/2 teaspoon dried chilli flakes
1 teaspoon dried oregano
Just under a teaspoon sea salt flakes or 1/2 teaspoon pouring salt, or to taste
2 teaspoons red wine vinegar
1 sirloin steak (approx. 300g)
250g cherry tomatoes, halved
Few sprigs of fresh oregano, to serve (optional)


Heat a griddle, or cast iron or heavy based non stick frying pan over high heat until hot.

Oil the steaks lightly on both sides, season with a little salt and pepper, to taste, remember the dressing has salt, so don't over salt.

I tripled the recipe as I had three steaks I needed to cook
In a small dish that can just fit the steak later, combine the extra virgin olive , chilli flakes, dried oregano, salt and red wine vinegar. Give it a little stir to combine.

Place the steaks in a dish where they fit snuggly.
Place the lightly oiled steaks on the hot griddle (or in the hot pan) and cook for 2 minutes on each side (cook longer if you don't like it rare, as 2 minutes gives you a rare steak as pictured). Once cooked to your liking place the steaks immediately into your chilli marinade and sit the cooked steak in the marinade for 2 minutes on each side.

Remove the steeped steak to a chopping board. Place the tomatoes cut side down into the warm chilli marinade, leave them there while you slice up your steak. Cut the steak into thin slices on the diagonal and arrange on a serving dish or 2 dinner plates.

Slice thinly and slice on an angle.
Mix the tomatoes around in the marinade, then pour them and the marinade all over the ribbons of meat. Add a few leaves of oregano, if you have them, I grow them so they are readily available, and serve immediately with some warm Italian crusty bread.

Tiramisu Torte

My uncle was coming over again, another one of my kids had a birthday party, so I had to come up with a new dessert. This time my focus was my mother though, she loves desserts and she loves coffee flavoured desserts, and for ages she has been trying to get me to make a new version of a Tiramisu.

Now I love my Mocha Tiramisu that I have been making for years, it has been a favourite of mine for over 20 years. But when I came across this recipe from a magazine clipping recently, I thought I'd give it a try. This one only used rum. Now rum is something I like in my drinks, and I'm quite happy to try different types of rum, but for this dessert, there was only one rum that I really liked and it is the Croatian one pictured below. Although I don't like to drink it, as it really is a Croatian liqueur with the addition of Rum Flavour, it has the most amazing aroma, it smells so good and what you smell is what you taste in your desserts. It truly can make a cake taste amazing. So for this recipe, try and get your hands on a bottle of this, it will truly make this tiramisu taste amazing. I also sprinkle it on my madarica now, it just is beautiful.

So my new cake was a hit, my mother loved it, my uncle thought it was nice, my other guests thought it was lovely, even my daughter the party girl loved it. It really is a lovely dessert cake.

What I added to this recipe that wasn't in the original recipe was what I also put in my mocha tiramisu which is Hazelnut chocolate. I find although I love tiramisu, it can be texturally just mushy and creamy, by adding coarsely chopped chunks of hazelnut chocolate, you add a bit of bite to the cake, which I just love.

Also the original recipe used 450g mascarpone, but I put in 500g, as my mascarpone comes in 250g tubs, so two tubs make 500g, and I refuse to throw out 50g, so if your tubs are 250g each, just add all of it, works just fine. If you can get 450g tubs, add just 450g.

So if you are having people over, this is a great cake to try, it can be made up to two days ahead of time and it looks and tastes great.

I can see this cake being made a lot over the next few years, we loved it, hope you do to.

Recipe

Adapted from Easy Food magazine

 Serves 8

6 egg yolks
200g caster sugar
160ml fresh milk
500g mascarpone
300ml thick cream
1 teaspoon vanilla extract
200g hazelnut chocolate, coarsely chopped
240ml strong hot coffee
60ml dark (Croatian) rum
340g savoiardi biscuits
Cocoa powder, for dusting


In a medium saucepan, whisk together the egg yolks and 150g of the sugar until combined.

Place over a medium heat, slowly whisk in the milk. When the mixture begins to boil, reduce the heat, continue whisking and simmer for 8-10 minutes, then remove from the heat, pour into a clean bowl and allow to cool. I whisk it every now and then so it cools quicker.

When cooled to room temperature, cover the mixture and place in the refrigerator for one hour.


After an hour, in a clean bowl, add the cream and vanilla extract. Use a clean hand mixer, with the whisk attachment, whisk the cream and vanilla together until the mixture forms stiff peaks. 

Once the egg yolk mixture has cooled, use the same hand mixer and beaters, no need to clean them, whisk the mixture until it thickens slightly. Add the mascarpone and whisk until smooth.


Combine the coffee, remaining sugar and rum. Mix until the sugar is dissolved, then allow to cool to room temperature.

Line the base and sides of a 20cm round springform tin with baking paper, make sure the paper extends above the cake tin by 3cm.

Dip each savoiardi biscuit in the coffee mixture for 1-2 seconds to soak. In your prepared cake tin, build the tiramisu. Begin with a layer of coffee dipped savoiardi biscuits, breaking them to fit where necessary. Add one third of the mascarpone mixture, spread it out evenly, then half of the whipped cream, spread out evenly. Scatter over half of the chopped hazelnut chocolate.

Now add on another layer of the coffee dipped savoiardi biscuits, half of the remaining mascarpone mixture, and all of the remaining whipped cream. Scatter over the remaining chocolate.

Finally add another layer of coffee dipped savoiardi biscuits and the remaining mascarpone mixture.

Using a sifter, dust a layer of cocoa powder over the top. Cover loosely with cling film and refrigerate for 24-48 hours before serving.

To serve, carefully remove the sides of the baking tin, gently peel away the baking paper on the sides. Trim the base baking paper but leave the cake tin base on, it will collapse if you try to remove it, place on a serving platter, serve cold.

Sunday Roast Salad

I was invited to go spend a few days with friends at Crescent Head recently, I love going away to places I haven't been before and I love holidays where you can just relax, where you wake up in the morning and you do something simple, yet fun, the parents get to relax whilst the kids actually go outdoors and chill, gadget free, just have plain simple fun. We had such a lovely time and it is always nice getting away with these friends.

And for those that like to drive, it is 5 hours from Sydney, but it is such a lovely drive, the road was great and as I rarely get to go on long drives, I enjoyed it.

 While there my friend showed me this recipe and I took a photo of the newspaper clipping, as it looked delicious and my family is big on eating salads. Well it is delicious. This is so easy to make, you simply bake the chicken and vegetables in the oven together, toss the warm chicken over some fresh young salad leaves, drizzle with the dressing and you get a lunch (or dinner) that is packed full of flavour.

This is the first time I tried baked broccoli and cauliflower, OMG, I love it baked, it was just so good. It is also great as the kids get to try different vegetables, and if they don't like everything that is fine, they can pick what they like.

I add the anchovies as they add seasoning and a lovely flavour, just remember to finely chop it, otherwise the kids will pick up that it is in there.

Adam called it a Sunday Roast Salad and I can see why, as this is the perfect recipe for a Sunday lunch as after a bit of preparation, very little, you get to chill with this delicious salad on a Sunday afternoon.

Also I will mention this is the actual recipe from a newspaper clipping but I actually double everything, except the chicken, when making it for my family. I love the fresh vegetables, so although no quite meatless, we all get a little chicken, but the highlight for us is the flavours from the vegetables. So add extra vegetables if you like, adjust the dressing as needed.

Also remember to not overcrowd your baking trays, bake on two trays if needed, just make sure everything is on one layer.

Now I like to serve this on a platter, with the salad leaves on the bottom,  but you can just as easily combine all ingredients in a salad bowl, dress it with the vinaigrette and serve it tossed as a normal salad.

So if you are looking for an easy Sunday lunch idea, or midweek meal idea, give this a go, it is so good, you will not be disappointed.

Recipe

Recipe adapted from Adam Liaw

​Serves 4

6 chicken thigh cutlets, trimmed of visible fat
1 1/2 cups broccoli florets
1 1/2 cups cauliflower florets
1 small red capsicum, deseeded and cut into strips
1 small eggplant, cut into 1cm cubes
1 cup cherry tomatoes, halved
3 anchovies, very finely chopped
2 tablespoons extra virgin olive oil
1 small red onion, peeled and very thinly sliced
8 cups mixed baby salad leaves
Black pepper, to serve

Light vinaigrette:
2 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
1 tablespoon lemon juice
A pinch of salt


Preheat your oven to 210C/190C fan forced.

In a large bowl add the chicken, broccoli, cauliflower, capsicum, eggplant, cherry tomatoes and anchovies. Add the oil and stir to coat.

Transfer the chicken and vegetables to a baking paper lined baking sheet large enough to fit everything in a single layer with a bit of space between the vegetables, use two baking sheets if needed, Season with salt and pepper, to taste.

​Roast the chicken and vegetables for 25-30 minutes (switching the trays if using two trays halfway through cooking) bake until the chicken is cooked through and the vegetables are starting to char around the edges.

While the vegetables are baking prepare the dressing. Whisk together the ingredients for the vinaigrette.

I like to use a platter for this, I scatter my salad leaves all over the platter, then scatter on the onion, drizzle with a little dressing.

Once the chicken is cooked, thickly slice it then scatter the chicken and roasted vegetables over the salad leaves (and any juices from the baking trays). Drizzle with remaining dressing, add extra pepper if you like and serve immediately.

Triple Choc Marble Mud Cake

My favourite mud cake of all time is my chocolate mud cake, but this one, this is my daughter's favourite. She requests this cake every birthday and it is still her favourite. She loves this one, as it is marbled and it is lighter in flavour than you normal mud cakes.

I have also discovered a new way to marble my cakes so if you read on, I will show you the best way to marble a cake, so easy, so good. I also always when dividing the batter have a little more batter where I add the white chocolate, as it makes for a tastier cake.

Decorate any way that you like, this just happens to be my daughter's birthday cake and she loves Oreo's and Strawberries.

As with all mud cakes, I do like it served with vanilla ice cream, it just works.


Recipe

50g unsalted butter, chopped
2 cups caster sugar
1 cup hot water
1 cup self raising flour
1 1/2 cups plain flour
2 eggs, lightly beaten
1 1/2 teaspoon vanilla extract
150g white chocolate, melted
150g dark chocolate, melted

Ganache:
300g milk chocolate, chopped
3/4 cup thickened cream 

Preheat the oven to a warm 150C. Grease a 20cm round cake tin and line with baking paper, make sure the paper extends 5cm above the cake tin.

Put the butter, sugar and water in a medium sized saucepan. Over low heat, stir until all is melted and smooth, don't allow to boil. Transfer the mixture to a large mixing bowl, cool for 15 minutes.


While the butter mix is cooling, melt the white and dark chocolates separately.

Whisk the two flours into the butter mixture, then eggs.

Divide the mixture in half. (I like to have slightly more cake mixture in the one I put the white chocolate mixture into). Stir white chocolate and vanilla into one portion, whisk to combine. Add the dark chocolate to the other portion and whisk to combine.

Now you can drop alternate spoonfuls of the white chocolate mixture and dark chocolate mixture into the prepared pan, then use a skewer to swirl it around to give the marble effect. But I prefer to pour one ladle full of the white chocolate mixture into the centre of the tin. Then pour a ladle full of the dark chocolate mixture right into the centre of the tin again, in the centre of the white chocolate mix. Repeat pouring ladle fulls alternating the white and dark into the centre of the tin, in the centre of the last mixture poured, and the mixture forms rings of marble when sliced. It is for me the perfect way to marble.

Place in the preheated oven, for 1 hour and 30 minutes, or until cooked when tested with a skewer. Stand cake in pan for 10 minutes, then turn out on a wire rack to cool. I have also left it in the pan to cool completely previously.

Ganache: Combine milk chocolate and cream in a small heatproof bowl, place the bowl over a pan of simmering water, stir, occasionally until the chocolate melts and the mixture is smooth. Place in the refrigerator, stir every 10 minutes, until the mixture is of a spreadable consistency, this can take up to an hour.

Trim cake top with a serrated knife. Spread the ganache all over the top and side.

Serve with ice cream and berries, if you like
