New York Cheesecake

Once I found this cheesecake recipe all other baked cheesecake recipes were thrown out.
This is the creamiest, most decadent baked cheesecake I have ever tried. If I think of a food that is sexy, this is it. This cheesecake is so smooth and creamy, it is truly a pleasure to eat, every mouthful amazing.

For years I tried making a baked cheesecake, I would follow the recipe and I would end up with a hard to swallow, dry cheesecake. I now use this recipe as a guide for all my baked cheesecakes. The secret was in the cooking time.

The cream cheese should be out of the fridge for 2 hours in its packet to soften properly. If you don't have 2 hours, slice it up and leave for 1 hour.

​​Give this or any of the cheesecakes above a go, they are simply amazing, the flavour, the texture, it is so good.

Recipe

It is best made the day before.
Serves 12

For the crust:
85g unsalted butter, melted, plus extra for tin
200g digestive biscuits, made into fine crumbs
1 tablespoon caster sugar

For the cheesecake filling:
900g Philadelphia full fat cream cheese, softened 
250g caster sugar
3 tablespoons plain flour
Pinch of salt
1 1/2 teaspoons vanilla extract
Finely grated zest of 1 lemon (2 teaspoons)
1 1/2 teaspoons lemon juice
3 x 60g eggs, plus 1 yolk
200ml sour cream

For the sour cream topping:
226ml sour cream
1 tablespoon caster sugar

2 teaspoons lemon juice

Position an oven shelf in the middle of your oven. Preheat the oven to 180C/160C fan. Line the base and sides of a 23cm round springform cake tin with baking paper. 


For the crust: I like to blitz the biscuits in a food processor until you get fine crumbs. To the crushed biscuits add the melted butter and caster sugar, mix well to combine. Press the biscuit mix into the base of your prepared tin, when evenly spread, bake for 10 minutes. Allow to cool while you make the filling.

For the filling: Once the crust is baked and removed from the oven, increase the oven temperature to 240C/200C fan. Using a free standing electric mixer., with the paddle attachment on, beat the soft cream cheese at medium-low speed for 2 minutes or until creamy.

With the mixer on low, gradually add the sugar, then the flour and salt. You should scrape down the sides of the bowl and paddle twice during this process to ensure it is all well combined.

Remove the paddle attachment and put on the whisk attachment. With the mixer on a low speed, add the vanilla, lemon zest and juice. Whisk in the eggs and yolk, one at a time. Here you should scrape down the sides of the bowl and whisk twice during this process to ensure it is all well combined. Add the sour cream and continue mixing until smooth and light, do not overbeat.

Brush the sides of the baking tin with some extra melted butter, if you forgot to line the sides of your tin with baking paper, otherwise you don't have to. Place the springform tin onto a baking tray. Place the cheesecake filling over the biscuit base. Smooth out the top, push any lumps down with a knife, if you have any. Bake for 10 minutes.

Reduce the oven temperature down to 110C/90C fan, bake for a further 25 minutes. When done, the cheesecake should wobble slightly when you gently shake the tin.

​ Open the oven door slightly and allow to cool in the oven for 2 hours. This gives you a cheesecake that is creamy in the centre. If you want a cheesecake with a drier texture leave the door closed the entire time. My cheesecake has never cracked on top, but it may according to the original recipe.

For the topping: Place the lemon juice and caster sugar in a bowl. Add the sour cream, mix well to combine. pour it over the cheesecake, spread it out evenly all the way to the edges. Cover the cheesecake loosely with foil and refrigerate overnight.

Unlock the sides from your springform tin, carefully remove the side baking paper. Slide the cheesecake carefully onto a serving plate if you like.

Slice and serve.

Nutella Banana Bread

My family love banana bread, they also really love nutella. So, when I came across this recipe, I knew I had to try it.

It was a huge hit. Everyone loved it.

This is really easy to make, takes about 10 minutes to mix together. You do need to use really ripe bananas, I tend to always buy extra bananas so that I have some to go overripe, then I freeze them until I need them.

I have found I need 3 large bananas to make 1 1/4 cups mashed banana.

I bake it for about 1 hr 10 minutes, but I start checking from the one hour mark.

Give this a go, your family will love you (even more) for it.

Recipe

Makes 1 loaf

1/4 cup (55g) unsalted butter, softened
1 cup (220g) caster sugar
2 large eggs
1 1/4 cups mashed bananas
1 teaspoon vanilla extract
1/3 cup milk
2 cups (300g) plain flour
3/4 teaspoon bicarbonate of soda
1/4 teaspoon salt
3/4 cup (250g) Nutella

Preheat oven to 180C/160C. Grease and line with baking paper a 11.5cm x 21.5cm (base measurement) loaf tin.

In a large mixing bowl add the softened butter and sugar, beat until light and creamy. Add eggs, one at a time, beating well after each addition.

Add the mashed banana, milk and vanilla extract, beat until well combined.

Add the flour, bicarbonate of soda and salt, using a spoon, mix until just combined. Do not over mix.

In a medium bowl add the nutella and 1 cup of the banana mixture, stir well to combine. (You can heat the nutella in a microwave for 15 seconds before adding the banana mixture, I don't do this, but you can, to soften the nutella).

Add alternate spoonfuls of the nutella mixture and the banana mixture into your prepared loaf tin. Once it has all been added, use a knife to swirl the mixtures together, do not over swirl.

Bake for 1 hour or until it feels baked by pressing on the loaf in the centre, it shouldn't feel too soft, it can take an additional 10 minutes, depends on your oven, just start checking at the one hour mark.

​Allow to stand in the loaf tin for 15 minutes before placing on a wire rack to cool completely.

Crunchy Potato Balls

This is something that gets my kids excited. They absolutely love these crunchy potato balls.

This recipe came about as I needed to use up leftover mashed potato (I hate waste). I found the recipe in a magazine and had cut it out for such a time when I had leftover mash.

If you don't want to add the garlic salt or chicken stock powder, as your kids may not like it, make it without it. They are still delicious.

You can make mashed potato for this recipe, it doesn't need to be leftovers only, just allow the mashed potato to cool, before making the balls. With leftovers, I like to make the balls once dinner is finished, then place them (uncrumbed) in the refrigerator overnight. But if you are tired or are having a party, you can make the balls out of fridge cold mash.

I sometimes use a measuring spoon to make the balls, sometimes I don't, but if you want them to look uniform in size, use a measuring spoon. 

I also shallow fry mine, the original recipe says to deep fry them, to me that is just a waste of oil and unnecessary, but you do what you prefer.

These are so good with the light and fluffy insides, and the crispy fried breadcrumbs on the outside. A great side to many dishes. Next time you have leftover mashed potato, give this a go.

Recipe

Makes about 30

3 cups mashed potato
1 egg
1/4 cup freshly grated parmesan cheese
Salt and white pepper, to taste

Plain flour
2 eggs, extra, beaten well
2 tablespoons milk
2 cups Panko breadcrumbs
1 teaspoon garlic salt
1 teaspoon chicken stock powder

Sunflower Oil, for frying
1 cup reduced fat sour cream
Sliced Lemon and tomato wedges to garnish


Add the mash to a large bowl. Add egg, parmesan, salt and pepper, to taste, mix well. Using a tablespoon measure, roll the mixture into balls (having your hands dusted in a little flour makes this process easier). Refrigerate overnight or for at least an hour.

Place flour in one bowl. Place egg and milk in another bowl, beat well to combine. Place the breadcrumbs, garlic salt and stock powder in a third bowl, mix to combine.

 Gently roll the potato balls in flour, then dip in beaten egg and milk, then toss in breadcrumb mixture.

Add oil to a frying pan (you need it to be about 1/2cm oil) heat over a medium heat.

Place the balls in batches in the hot oil and fry, turning every minute or two (once golden on the bottom) until the entire ball is golden brown and crispy. The oil should not be burning the balls, if the oil is too hot, decrease the heat, if too slow, increase the heat. Drain on absorbent paper.

Serve hot with sour cream and garnished with sliced lemon and tomato wedges.

Apple, Berry and Rhubarb Crumble

This recipe I first tried because of my mother. My mum loves rhubarb and would regularly talk about how at work they served rhubarb and how she enjoyed it. So one day when she was coming over I thought I'd try this recipe to surprise her. I myself had never tried rhubarb before. She loved it, as did my entire family, and now this has become a regular light dessert after dinner at my house. I must also mention my non dessert eating uncle tried it and loved it also, I was very pleased with that.

This dessert is so simple to make.
 
Sometimes I make it with just apple and berry, sometimes rhubarb and apple, sometimes rhubarb and berry. I prefer thin sticks of rhubarb to thick ones, but I buy whatever I can find. If the rhubarb is thick, just slice it into smaller pieces. Whatever I have in the house gets thrown together and it works every time. Also if you don't have walnuts, use hazelnuts or slivered almonds or any other nut you like. 

I double up the quantities when I need a larger crumble.

If you have never tried a crumble, you really must, it is such a lovely dessert.

Recipe

Preparation Time: 10 minutes
Cooking Time: 1 hour
Serves 6-8

2 large red apples, peeled, cored and sliced
8 stalks rhubarb, thickly sliced
250g strawberries, halved
250g mixed frozen berries
2 tablespoons caster sugar
1/2 cup water

Crumble Topping:
100g flour
100g caster sugar
60g cold unsalted butter
30g walnuts
60g rolled oats

Preheat oven to 200C/180C fan forced.

Place the apple, rhubarb and berries in a 2.5L ovenproof dish.

Sprinkle over the sugar and pour in the water.

In a small food processor, place the flour, caster sugar and cold butter. Blitz for 5-10 seconds until well mixed and there are no lumps of butter. Add the walnuts, blitz for 2-3 second, so they are chopped but not too finely. Stir through the rolled outs. Spread evenly over the top of the fruit.

Bake for 1 hour or until the top is golden and the fruit is bubbly. Serve with vanilla custard or vanilla ice cream.

Mexican Beef Stew

This year I have decided to try cooking more Mexican food. Once upon a time the only Mexican food I ate or made, was a taco. So as I discovered my whole family like Mexican flavours, I am trying more and more recipes.

This one is great. It is great because it tastes great, and it is great, as once the initial prep work is done, I can put it in the oven and forget about it for 2 1/2 hours.

Recipe

Recipe adapted from Julie Goodwin's cookbook 'Gather'

Serves 4

1/4 cup plain flour
1 1/2 tablespoons ground cumin
1 teaspoon chilli powder
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1.5kg chuck steak or gravy beef, diced
1 1/2 tablespoons olive oil
1 large brown onion, diced
2 cloves garlic, chopped
2 tablespoons tomato paste
3 long green chillies, seeded and finely chopped
1 litre beef stock


Preheat the oven to 160C/140C fan forced.

Place the flour, cumin, chilli powder, salt and pepper in a large snap lock bag. Give it a shake to combine. Add the diced beef, shake the beef about to coat it in the flour mixture.

Heat 1 teaspoon of the olive oil in a large enamel pot over a medium-high heat. Shake the excess flour off 1/4 of the beef (it will burn if you don't, reserve the flour in the bag). Add the beef to oil and brown, until golden on all sides. Transfer to a bowl, then cook the remainder of the beef in three more batches.

In the same pan, heat the remaining oil and sauté the onion and garlic for 5 minutes, or until the onion is translucent. Add the tomato paste and chillies, sauté a further 1 minute.

Return the beef to the pot, along with any flour left in the snap lock bag. Add the stock, give everything a good stir, bring to the boil.

Once it is boiling, place the lid on the pot and bake in the oven for 2 to 2.5 hours or until the beef is very tender. Take out of the oven, if the stew is too liquid, just place it on the stove top for about 10-20 minutes over low heat to thicken up. Just watch it and stir occasionally as it will thicken quickly and can catch on the bottom.

Serve over a bed of rice, a spoonful of salsa and a dollop of sour cream.​

ANZAC Biscuits

Each year my daughter likes to make these ANZAC biscuits on ANZAC day. It has become a tradition.

They are super quick to make, and are packed full of flavour.

Depending on how big or small she makes them determines how crisp or soft they are. I love them crisp and crunchy, she likes them a little softer. If you want them softer, just bake them a little less.

Once a year we make these, we really should make them more often as we love them, but it has just become an ANZAC Day memorial biscuit, you need to make them to.

Makes 20

140g rolled oats
150g plain flour
220g brown sugar
45g desiccated coconut
125g unsalted butter
2 tablespoons golden syrup
1 tablespoon water
1/2 teaspoon bicarbonate of soda

Preheat oven to 170C/150C fan forced.

In a large bowl combine the oats, flour, sugar and coconut.

In a small saucepan add the butter, golden syrup and water. Stirring constantly over medium heat until the butter has melted. Stir in the bicarbonate of soda.

Pour the butter mixture into the dry ingredients, stir to combine.

Roll level tablespoons of the mixture into balls. Place on a baking paper lined baking tray, 5 cm apart, flatten with your fingers slightly.

Bake for 16 minutes or until biscuits feel slightly firm. Leave on the baking tray for 5 minutes before transferring to a wire rack to cool completely. They biscuits crisp up once cooled.

Buttermilk Fried Chicken

My mum is quite cool in the kitchen, she is close to 70 years old and yet she is still trying new things to cook. I do believe my passion for cooking comes from her, she was always buying cooking magazines, cutting out recipe clippings, just like I do today. She loves watching cooking shows and recording recipes. She actually made me four dvd's of recipes the other day of food she thinks I would like to try.

The other day I popped over for a visit and she had two new dishes she wanted me to try, this was one of them. I loved it, as did my kids. So when I was making something my husband requested for dinner (I knew my kids wouldn't really like), I decided to make this for them, one so they would eat dinner, and two so I could post this recipe, as I don't post recipes on this site, unless I have cooked it myself.

This is super easy to prepare and make. I find the batter crispy and light. Some of the batter came off the chicken while I was frying it, but it did not matter, I just scooped it out of the oil, drained it on paper towels and scattered it around the chicken, it was delicious. I honestly find this nicer than store bought fried chicken, and much, much cheaper. My kids took the leftover chicken to school the following day, and after hours in the refrigerator, the batter still had some crispiness to it.

I used chicken wings but you can buy a whole 1.6kg chicken and cut it into 10 pieces (2 legs, 2 thighs, 4 breast quarters and 2 wings).

Serves 8-10 as finger food

2kg chicken wings

Marinade:
500ml buttermilk
1 tablespoon salt
1 tablespoon allspice
2 bay leaves

For deep frying:
Rice bran or sunflower oil

Coating:
3 cups plain flour
1 1/2 tablespoons garlic powder
1 1/2 tablespoons onion powder
1/2 tablespoon + 1/2 teaspoon paprika
1/2 tablespoon + 1/2 teaspoon cayenne pepper
1/2 tablespoon + 1/2 teaspoon salt
1/2 teaspoon white pepper

Place the buttermilk, allspice, bay leaves and salt in a large bowl or a large snap lock bag. Mix it about to combine the ingredients.

Cut the wings at the joints to form, a drumette and wingette, discard the wing tip ( I tend to freeze the wing tips and use it when making stock or soup another day).

Add the chicken pieces to the buttermilk mixture, seal the snap lock bag (if using) and mix the chicken through the buttermilk. If using a bowl, cover the bowl with cling film and refrigerate the chicken overnight. Toss the chicken once on the day of cooking to ensure all chicken pieces are submerged in the buttermilk.
In a large bowl add the flour, garlic powder, onion powder, paprika, cayenne, salt and pepper. Gently whisk the spices through the flour to mix it in well.

As I don't deep fry often, I don't have a deep fryer, so I used a saucepan. Pour oil into a medium to large saucepan (I used a 4 litre one), the oil needs to come up 1/3 of the way up, so the chicken wings can be submerged in the oil for deep frying. Put the saucepan over a medium heat, as you don't want the batter to burn too quickly but still have raw chicken in the middle.

Just before frying, dip the chicken pieces into the bowl of flour mixture, coat all over, pat off any excess flour. When the oil is hot enough (check with a cube of bread it needs to sizzle as soon as it is dropped in the oil) carefully lower the pieces into the hot oil, do not overcrowd the saucepan, I did 5-6 wing pieces at any one time and I did just drumettes or wingettes per batch for even cooking. Adjust the heat as necessary for even cooking, and fry for 11-12 minutes, until the chicken is a deep golden brown colour, cooked through and very crisp.

Transfer to a cooling rack or a paper towel lined plate to drain off any excess oil. Season with a little more salt.

Arrange on a platter and serve to your guests.

Chocolate Brownies (2)

The other brownie I have posted on my site has a brownie/cake feel to it, delicious yes, but not quite what I thought a real brownie should be. So off I went searching for another recipe, and I found this one.

This brownie does not need ice cream, it can proudly be eaten on its own. I really like this one. I cooked it in a fan forced oven (as that is what I have until I can afford another really good and expensive one-any company out there feeling like donating one-especially those self cleaning ones, I'd be happy to accept it).

Anyway back to the brownie, I baked it at 180C in a fan forced oven and what you get is a crisp border on the brownie which I personally love, and the middle of the brownie is soft and chocolatey and just delicious. So in one bake you get two types of brownie. For me I loved it.

I thought it would be really sweet, there is a bit of sugar in this, even makes me cringe a little, but it wasn't too sweet, at all. It is one of those things I can make with ingredients I have in the house, most of the time, and it was quick to put together.

It is a really good brownie.

Recipe

Recipe adapted from 'The Essential Baking Cookbook'

Makes 24 pieces

40g plain flour
60g cocoa powder
500g sugar
125g chopped pecans or walnuts (optional)
250g dark chocolate, chopped into small pieces
250g unsalted butter, melted
2 teaspoons vanilla extract
4 eggs, lightly beaten

Preheat the oven to 200C/180C.

Grease and line with baking paper a 20cm x 30cm cake tin, leaving the paper hanging over on the two long sides.

In a large mixing bowl add the flour, cocoa and sugar. Use a whisk to mix it together. Add the nuts (if using) and the chocolate, mix well.

Pour in the melted butter, mix a little, then add the vanilla and eggs. Mix well to combine.

Pour into your baking tin, smooth the surface and bake for 50 minutes (the mixture will still be a bit soft on the inside).

Allow to cool in the tin for 30 minutes, then place the brownies (still in the tin) in the refrigerator for 2 hours before lifting it out, and cutting into pieces.

Best Ever Berry Pikelets

I am always on a search for the next best recipe, always trying something new. But I can now say I have found the perfect pikelet recipe. And I can now say I will not try another pikelet recipe again, these were perfect.

These pikelets were fluffy, these pikelets were light. When I poured the batter it did not spread out like other pikelet recipes I tried before, where they became flat and rubbery. These pikelets kept there shape, they were thick, yet so soft to eat. These were simply put amazing.

The original recipe used raspberries, I decided to make half of them with raspberries, half with blueberries. My kids preferred them with blueberries, as the raspberries were really tart.

My kids loved them with there usual favourite Nutella, but in the recipe I will write to serve it with crème fraiche which is what the AWW serve it with.

Give these a go, you will not regret it.

Recipe

Recipe adapted from The Australian Women's Weekly Cookbook 'Baking Day'

Makes 15-20

150g self raising flour
1 tablespoon caster sugar
1 egg
1 1/4 cups (310ml) buttermilk
25g unsalted butter, melted
65g fresh berries, raspberries or blueberries
Canola cooking oil spray, to grease
1/2 cup crème fraiche
2 teaspoons icing sugar


Sift flour and sugar in a medium bowl. Whisk in egg, buttermilk and melted butter, until smooth. Stir in raspberries or blueberries.

Spray a large frying pan with a little cooking spray, place over medium heat. (They need to cook gently, otherwise you will burn the outside, but they will be raw inside, adjust temperature if needed).

Pour 1 tablespoon of batter ( I just use a heaped soup spoon) into the frying pan for each pikelet. Spread it out a little if it is too thick. (If it is too thick you can add more buttermilk to the batter in your bowl, if needed). Cook the pikelets for 2-3 minutes or until bubbles appear on the surface. Turn and cook for 1-2 minutes until browned lightly and cooked through. Repeat with remaining batter, spraying the surface of the pan with oil each time.

Serve warm with crème fraiche, extra berries and sifted icing sugar.

Lemon and Coconut Brownies

I'm on a little brownie making phase at the moment, why, because they are so easy to throw together and I usually have the ingredients needed to make them in my pantry.

I love lemon based desserts, I find them very refreshing. So when I saw this recipe, and I had all the ingredients at home, I simply had to make it.

I loved them, they were nice and moist, perfectly lemony and the coconut made them slightly chewy. Overall a very nice brownie I will make again and again.

Makes 15-20 slices

250g unsalted butter
430g caster sugar
4 eggs
225g plain flour
85g desiccated coconut
Finely grated rind of 3 lemons
60ml freshly squeezed lemon juice
Icing sugar, to dust

Preheat the oven to 180C/160C fan forced.

Grease and line with baking paper a 20cm x 30cm (base measurement) slab pan.

Melt the butter in a small saucepan over low heat. Remove from heat and pour into a large mixing bowl.

Add the sugar, whisk to combine. Add the eggs, one at a time, whisking after each addition, whisk until the mixture is thick and glossy.

Add the flour, whisk until combined. Whisk in the coconut, lemon rind and lemon juice. Pour into your prepared pan. Bake for 35 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan to cool completely.

Cut into pieces, dust with icing sugar to serve.
