Raspberryoska
The flavours of this cocktail are amazing. I truly mean amazing.
The colour, also amazing, the most beautiful red colour you have ever seen. In the photo below I have added sparkling mineral water to it, so it is lighter in colour (and to drink). I have to say I love it with only a dash of mineral water, not too much, but sometimes if I'm having a party I'll add a bit more, as no food would get served if I drank this full strength, all day.
And the smell of it, simply divine.
The addition of mint to the recipe is my husbands idea, we like it, so use it if you want to.
This is a take on a Caipiroska, which is another one of my favourite drinks.

Recipe
Recipe adapted from Janelle Bloom's cookbook 'Family Food and Weekend Feasts'
Serves 4-6 (4 in our house)
1 cup frozen raspberries
4 limes, chopped
1 tablespoon caster sugar
1/2 cup palm sugar syrup
1 cup of crushed ice or ice cubes
250ml chilled vodka
Chilled lightly sparkling mineral water, optional
Mint sprig, to garnish, optional
Palm sugar syrup:
1 cup chopped palm sugar
1 cup water
Serves 4-6 (4 in our house)
1 cup frozen raspberries

250ml chilled vodka

Palm sugar syrup:
1 cup chopped palm sugar
1 cup water
Make the palm sugar first, as it has to be cold to use it. Place the palm sugar and water in a small saucepan. Place over medium heat, cook, stirring for 5 minutes or until the sugar has dissolved. Bring to the boil and simmer for 6 minutes or until the syrup has reduced slightly. Set aside to cool. Once cool pour into a sterilized jar, refrigerate until cold.
In a large 2L jug, add the frozen raspberries, 3/4 of the chopped lime and the sugar. Use the end of a rolling pin to smash up the raspberries and lime, and to dissolve the sugar. Add 1/2 cup of the cold palm sugar syrup.
Add the crushed ice or ice cubes until the jug is half full. Top with the vodka and stir well. Pour into glasses garnish with the remaining chopped lime and a mint sprig, then drink as is. Or pour into glasses and top up with the sparkling mineral water, garnish and drink this lighter version.
Serve immediately.
