Chocolate Brownies...Without Butter
Now I normally don't like to mess with desserts. I like a brownie for a brownie. I know what's in them and I know they are sometimes food.
But recently I have been trying a new cookbook out, and I have loved all the recipes I have tried from it, so I thought I'd give these brownies a try.
These brownies use apple sauce instead of butter, I have no idea how it is interchangeable, but it is. These were delicious, they were chocolatey, moist, soft and really nice to eat, I really enjoyed them.
Now as I use chocolate chips in them, they aren't dairy free, but for Easter when I spend the day with my family and some of them are lactose intolerant, I would make these using dairy free chocolate chips, I think they'd be great.
You can add 50g chopped walnuts to the brownie mixture if you love nuts in your brownies.

Recipe
Recipe adapted from the cookbook Simply Italian-Cooking at Home with The Chiappa Sisters
Makes 9-12 brownies
100g plain flour
25g cocoa powder
100g brown sugar
1 tsp baking powder
pinch of fine salt
1 egg
130g apple sauce
1 tsp vanilla extract
150g chocolate chips
Cooking Spray, to grease

Preheat the oven to 180C/160C fan forced.
Grease a 20cm square baking tin with a little cooking spray.
Place all the ingredients into a large bowl and mix together until well combined. It may seem drier than other brownie mixtures, but it will be fine once baked.
Scrape the mixture into the prepared baking tin and, using the back of a spoon, spread to create an even surface.
Bake for 15-20 mins and leave to cool for 5 mins before serving.
