Chocolate Fudge Brownies-Gluten Free
As I am no expert in Gluten Free baking, each time I get together with someone who is gluten intolerant I will try a different cake or dessert. Some are complete failures, very ordinary tasting, but some are a success.
These brownies were a success. The kids I had over that day enjoyed these and went back for seconds. They are simple to make, just melt, mix and bake.
So for those of you who are gluten intolerant here is a brownie you to can enjoy.

Makes 24 slices
1/2 cup rice flour
1/2 cup plain gluten free flour
1/4 teaspoon baking powder
1/3 cup cocoa powder
1 1/4 cups caster sugar
2 eggs, lightly beaten
150g unsalted butter, melted

Preheat oven to 180C.
Grease and line with baking paper a 4cm deep, 20cm x 30cm (base) slab pan. Allow a 2cm overhang of the baking paper at both ends.
In a large bowl sift in the flours, baking powder and cocoa. Add the sugar. Stir to combine.
Add the eggs and melted butter, mix with a metal spoon until just smooth.
Spread into your prepared pan. Bake for 20 to 25 minutes or until just set in the centre. Remove from the oven. Allow to cool in the pan.
When cooled, lift out of the pan, slice as big or small as you like.
