Chocolate Ganache Tart with a Pecan Crust

Instead of a large tart, you can make smaller individual tarts
When I first made my other chocolate tart recipe with the Oreo crust I had some leftover ganache so I thought I'd try this one in mini form, just to see if I liked it. Well I did, so I thought I had to try to make it again in full size.

This one is gluten free. Now sometimes I get disappointed when I try gluten free recipes, but not this time. This is delicious. My daughter actually prefers this version to the Oreo version, she says it reminds her of Ferrero Rocher chocolates. My husband who doesn't usually eat chocolate desserts, asked for seconds.

The pecan base is deliciously nutty, I added the salt to the original recipe to counter the richness of the chocolate and the ganache is one of the best I have made, delicious and sets beautifully, but never goes too hard.

And did I mention how easy this is to make, my goodness it is easy. A bit of blitzing in a food processor to make the base, then melt and mix the ganache. Dessert done. Very impressive dessert for something so simple to make. This is one of those desserts that will wow your guests, and only you will know how little time it took to make it, unless of course you are one of my friends, and you just read this.

Use the best quality chocolate you can find. Truthfully I like Plaistowe, it is easy to find and works well when melting, and I love the flavour of it.

As for the nuts, chocolate and nuts go well together. If you love walnuts or hazelnuts or any other nuts, feel free to try using different nuts in your base. I toast the nuts before blitzing in a preheated oven for about 6-8 minutes, keep an eye on it as you want it lightly toasted, not burnt. As soon as it starts to smell toasted, take it out.


Recipe

Makes 1 x 23cm round tart

Serves 14

For the base:
2 1/2 cups pecan nuts, toasted and slightly cooled
1/2 cup caster sugar
42g salted butter, melted and cooled

1/4 teaspoon sea salt flakes

For the filling:
600ml thick cream
455g dark chocolate


You will need a 23cm deep sided loose bottomed flan tin.

For the base: Preheat oven to 175C.

Place the pecans into a food processor along with the sugar. Blitz them together until you have coarse like sand. Add the melted butter through the feed tube, with the processor running, blitz until the ingredients are moistened.

Press the pecan mixture into your tart tin and pat down firmly on the bottom and up the sides of the tin with your hands, so that the base and sides are evenly lined and smooth. Put it into the freezer (or refrigerator) to chill for 15 minutes.

Remove from the freezer and bake for 12-15 minutes or until the crust is lightly toasted. Allow crust to cool while you make the ganache.


For the filling: Place the chocolate and cream into a medium sized heatproof bowl. Place the bowl over a pot of simmering water, don't let the water touch your bowl. Stir frequently, until the chocolate has melted and the mixture is smooth. The mixture shouldn't be too hot.

Sprinkle the sea salt flakes evenly over the pecan base. Now carefully pour the chocolate ganache into your tart tin. Refrigerate for 30-60 minutes.

 If decorating with the fruit, the chocolate needs to be just setting (but still be a little soft) for the fruit to stick, but not sink. So refrigerate until you can do that. Decorate however you like.

After decorating with fruit place back in the refrigerator for at least 4 hours before serving. This can however be made the day before and refrigerated overnight. 


To serve, take the tart out of the fridge for 20 minutes before serving, but unmould it straight away, the tart base has to be fridge cold when unmoulding.

To unmould, sit the flan tin on top of a large bowl and let the ring part fall away, then transfer the tart to a plate. Leave the base on. You can, if brave, carefully remove the base with a knife, but you need to be super gentle here, but you can also leave it on, it isn't a restaurant after all.

Slice modestly, this is rich, and people can always come back for more.

Serve with vanilla ice cream or freshly whipped cream if you have a sweet tooth or with some crème fraiche, the sharpness with the sweet is lovely.

Chocolate Ganache Tart with an Oreo Crust

Divine, that is the first word that comes to mind when I'm thinking of a word to describe this dessert. This is divine.

Every single bite of this dessert is fabulous. The slightly salted Oreo base is crumbly and delicious, the smooth chocolate ganache filling will set in the refrigerator but will never set hard, it will slice perfectly, yet be creamy and moreish. The fruit on top, just perfect. I can not praise this dessert enough.

Now I originally tried this with a good quality store bought chocolate pastry dough, but I was disappointed with the base, it was hard and not quite what I wanted, it didn't compliment the filling. However, I loved the filling. So I have combined two recipes here, I used the Oreo base idea from another recipe, added the filling from the original recipe and the outcome is, I loved every single bite.


This is one of the easiest things I have ever made, honestly. You blitz up some biscuits, chocolate and butter, press them into a tart tin, melt some cream and chocolate, pour it over the biscuits, decorate with some fruit and dessert is done. I now make these in about 30 minutes without rushing. 

Now as pictured the base does crumb ever so slightly, but you will not care, as it makes no difference to the end result. You could wipe away the crumbs, but I love the look of imperfection, it makes it known that it is homemade. I would only add more butter to the Oreo's if, and only if, the biscuit mix doesn't stick together when pressed in the pan, but you really don't want an oily biscuit base. Remember the chocolate helps it hold together to.

Now the original recipe is for a large tart (23cm round), so feel free to make it this size and just slice and serve, you might want to add the fruit on the side or decorate after slicing though. As for the individual ones, you will have enough ganache to make about 14 tarts, but Oreo base mixture to make 10, so I suggest just make an extra half quantity of the base mixture (i.e. 14 Oreos, 25g dark chocolate, 25g butter and 1/4 teaspoon salt flakes) or halve the ganache quantity if you want to make less. The sea salt flakes are essential, for me that is, it subtly counters the richness of the chocolate, but if you really don't want to add it, then don't. And if you are adding the sea salt it must be the sea salt flakes, not regular fine table salt.

Buy good quality dark chocolate, it is the star of the dish.

You could serve this with ice cream or crème fraiche, it is although optional, as it is not needed. I love it topped with berries, strawberries are my favourite, but raspberries are delicious also.

Loose bottom flan tins are essential here, if you don't have one, buy one. I got the individual ones from Aldi, very cheap, keep an eye out for them. Honestly I have every shape and size and once I bought them I kept using them, they are the best for tart making.

So if you are looking for an easy, make ahead dessert, this one is perfect, give it a try.

Recipe

Recipe adapted from Nigella Lawson's cookbook Simply Nigella and from www.moresweetsplease.com

Serves 14

Makes 1 x 23cm round tart or 14 x 8cm individual tarts (see notes above for individual tarts)

For the base:
28 Oreos cookies (2 x 154g packets)
50g dark chocolate, broken up
50g soft unsalted butter
1/2 teaspoon sea salt flakes

For the filling:
600ml thick cream
455g dark chocolate


You will need a 1 x 23cm deep sided loose bottomed flan tin or 14 x 8cm loose bottomed flan tins.

For the base: Place the biscuits into a food processor along with the broken up chocolate. Blitz them together until you have crumbs. Add the softened butter and salt, and blitz again until the mixture starts to clump together.

If you don't have a food processor, don't fret, just bash the biscuits in a freezer bag until they form crumbs, pour into a large bowl. Add finely chopped chocolate. Now you will need to melt the butter in this instance and add it to the crumbs, along with the sea salt. Mix together with a wooden spoon.

Press the crumb mixture into your tart tin and pat down on the bottom and up the sides of the tin with your hands, so that the base and sides are evenly lined and smooth. (For individual tarts I put in about 2 heaped soup/dessert spoons into each tin). Put it into the refrigerator to chill and harden for at least 1 hour for the large tart, for the individual tarts I refrigerate it while I make the filling.


For the filling: Place the chocolate and cream into a medium sized heatproof bowl. Place the bowl over a pot of simmering water, don't let the water touch your bowl. Stir frequently, until the chocolate has melted and the mixture is smooth. The mixture shouldn't be too hot. Carefully pour the chocolate ganache into your large tart tin, or ladle it into the small tins. Refrigerate for 30 minutes.

 If decorating with the fruit, the chocolate needs to be just setting (but still be a little soft) for the fruit to stick, but not sink. So refrigerate until you can do that. Decorate however you like.

After decorating with fruit place back in the refrigerator for at least 4 hours for the large tart and at least 2 hours for the individual tarts before serving. These can however all be made the day before and refrigerated overnight. 

To serve, take the tarts out of the fridge for 10 minutes before serving, but unmould them straight away, the tart base has to be fridge cold when unmoulding.

Classic Prawn Roll 2

So my husband was off to the fish markets one Sunday morning and I asked him to get a few cooked prawns. He bought some fish that we had for lunch, but then I was full so the prawns were left for the following day.

For the last few weeks any new recipe I try must come from one cookbook, I use the same cookbook all week, then change cookbooks. This week it was Bill Granger week. In his cookbook he made lobster sandwiches. Now I love lobster, but I'm not sure I want to put it into a sandwich, I'd come up with something a little more exciting than a sandwich when using lobster. But as I had prawns, I thought that they would work perfectly in this sandwich.

And they did, this sandwich is so delicious, honestly after I had the first bite, it was an OMG moment, it was divine. The mayonnaise is so easy to make, a bit of store bought mayonnaise (I only use Thomy mayonnaise, and I'm not paid to say that, it is just the only mayonnaise I love) mixed with a few other ingredients and wow it is delicious. And as for cucumbers, how a simple cucumber makes a sandwich amazing, I absolutely love cucumbers in sandwiches.

For my son I used the white roll above as he loves that, but I preferred the open sandwich on rye bread below. So use whatever bread you love to make a sandwich that is so good, you'll want another.

One day I'll try this with lobster, but for now the prawn will do, it tastes great and it is cheaper.

So if you are off to a picnic one day, or if you have a few prawns that need to be used up,  make this sandwich, it is so good, every bite will be loved. I'm even thinking if I slice up a breadstick thinly, this could work as finger food with drinks at my next party or barbecue.

Recipe

Recipe adapted from Bill Granger's cookbook Bills Food

Serves 4

4 good quality white bread rolls (any bread you love)
Butter
15-20 cooked prawns, depends on the size of your bread
1 Lebanese cucumber, peeled and thinly sliced

Chive Mayonnaise:
125g (1/2 cup) mayonnaise (I use Thomy)
2 tablespoons lemon juice
2 tablespoons chopped fresh chives
1/2 teaspoon Tabasco sauce
Sea salt and pepper, to taste


Cut the bread rolls in half lengthways, leaving them attached along one side. Spread both halves with a little butter.

Make the chive mayonnaise: Mix the mayonnaise with the remaining ingredients, season well with salt and pepper.

Spread a layer over the bottom half of each roll (you can add it to the top layer if you like as well), then top with alternating pieces of prawn and cucumber.

Serve immediately or wrap up in cling film and keep chilled until needed, if taking on a picnic.

Spatchcock with Spicy Corn Salad

I love roasted spatchcock, or some may call them poussin. They are so delicious (far better than a roasted chicken for me). The meat is so tender, the breasts are so moist, not dry at all, and they are really easy to cook.

It is Bill Granger week in my house, all new recipes must come from his cookbook Bills Food.

Now I will say, Bill says to roast the spatchcock for 35 minutes, mine needed 50 minutes to be cooked through, where the meat fell off the bones and everything was still juicy, not dry, it will depend on the size of your spatchcock, I tend to buy around 600g spatchcocks. So you will need to keep an eye on the spatchcock a little, it is done when the skin is crisp and when you poke the chicken with a skewer, the liquid is clear, not pink.

Do not overcrowd your roasting tin, make sure there is space between each spatchcock, that will ensure even cooking and crisp skin all over.

This is perfect when cooking for one, as you can still enjoy a roast, but not have tonnes of leftovers.

My family love the individual portions they get, they think it is great. And I love it, as when I roast a whole chicken, my kids take the legs, wings and thighs, and I'm usually left with the dry breast that no one wants. By roasting spatchcocks I get to have legs, wings and thighs to, and the breast is so delicious I enjoy that to.

The Spicy Corn Salad I really enjoyed, it was crunchy and really tasty. If you prefer you could serve it with a simple green salad to accompany the spatchcock. Make whatever side you like, this is merely a suggestion. The recipe is ultimately about the spatchcock.

So here is a really simple roasted spatchcock recipe you should try, it really is worth it.

Recipe

Recipe adapted from Bill Granger's cookbook 'Bills Food'

Serves 4

4 spatchcocks (poussin), rinsed and dried with paper towel
Sea salt and pepper, to taste
1 lime
2 tablespoons olive oil

Spicy Corn Salad:
350g (2 cups) corn kernels, cut from 2 corn cobs
200g green beans, trimmed and sliced diagonally into 1cm pieces
60ml (1/4 cup) extra virgin olive oil
80ml (1/3 cup) lime juice
1 long green chilli, seeded and finely chopped
Sea salt and pepper, to taste
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/2 small red capsicum, finely diced
6 spring onions, diagonally sliced
1/4 cup chopped fresh coriander


Preheat the oven to 220C/200C fan forced.

Season the spatchcock liberally with salt and pepper inside and out.

Thinly slice the lime and squeeze some of the lime juice over the skin of the spatchcock. Put some lime slices (about 2 slices in each spatchcock) into the spatchcock cavity, then tie the legs together with kitchen string.

Place the spatchcock with the breast side up in a roasting tin (make sure there is space between each spatchcock for even cooking) then drizzle with the olive oil.

Bake for 50 minutes or until golden and cooked through. Start checking it after 40 minutes as each oven is different.

While your spatchcock is baking make the spicy corn salad.

Bring a saucepan of water to the boil over a high heat, add the corn kernels and green beans. Once the water comes back to the boil, cook for one minute. Drain and refresh under running cold water.

Whisk the olive oil, lime juice, chilli, sea salt, pepper, cayenne pepper and cumin together in a large bowl to combine. Add the corn, beans and remaining ingredients and stir to combine. Allow to rest for 20 minutes so the flavours can develop. Stir again.
