Strawberry Cream Cheese Pastries
The other day I posted a Strawberry Cream Cheese Tart recipe, 5 ingredients, super easy super tasty. My family loved it. On that recipe there was a link to a blueberry and raspberry version of that tart. So I thought I had to try those to. Now the cream cheese recipe on the blueberry and raspberry versions was different to the strawberry one I had made, it was lemon infused. So when I gave the blueberry and raspberry versions a go, I also made a few with strawberries as well.
Thank goodness I did, they were OMG good. They were delicious, probably my favourite of the three berry varieties.
This is the kind of dessert my family gets excited over, anything with fresh fruit makes my kids look like they have never eaten before, they sit at the table and start counting the pieces and working out how much they can have. It makes me laugh as they never known hunger and there is always plenty.
As mentioned above this recipe I am posting 3 ways, one is the strawberry version, two is a raspberry version and three is a blueberry version (links to the raspberry and blueberry version is at the bottom of this page). I have cut them into rectangles, but make them any shape you like. Valentines day for example, cut out heart shapes, cut out circles, squares, whatever you like. Now back to the tarts, the combination of the strawberries with the lemon flavoured cream cheese and pastry is just beautiful, each and every bite, just divine (good luck at trying to only eat one). The strawberries go a little syrupy, truly, they are so good.
For a quick dessert I like to serve it with a dollop of vanilla ice cream, but if I was having a party I would just place them on a platter on there own, trust me they would go quickly.

Recipe

Makes 8
250g cream cheese, softened
1/3 cup caster sugar
1 teaspoon lemon zest
2 teaspoons lemon juice
2 teaspoons vanilla extract
2 sheets puff pastry, thawed
1/2 cup strawberry jam, optional
3 cups fresh strawberries, sliced
1 egg
Icing sugar, for dusting

Preheat oven to 200C/180C fan forced. line a baking tray with baking paper.
In a large bowl, beat together the cream cheese and sugar until smooth. Add the lemon zest, lemon juice and vanilla extract and beat until combined. Set aside.

Cut the puff pastry into 6 rectangles (first cut into 3 long rectangles, then cut each long rectangle in half). Place on your prepared baking tray. Repeat with second sheet of pastry.
Using a sharp knife score a rectangle shape 1 1/2cm from the edge (do not cut through the pastry, just lightly score it). Using a fork prick the centre of the pastry inside of the rectangle.
Place a dollop of the cream cheese mixture into the centre of each pastry, spread out within the scored area. Place on a dollop of the strawberry jam, if using, spread out over the cream cheese.
Arrange the sliced strawberries over the cream cheese mixture.

Dust with icing sugar, to serve. Add a dollop of vanilla ice cream, if desired.
