Ella's Creamy Chicken or Pork Pasta
Looking at this dish, you may think, doesn't really look like much. But you would be wrong, it has a great flavour, is super easy and most importantly my kids love it. Is it a restaurant dish, no, but it is a tasty meal that will feed the family, and all leave the table happy.
This dish originated in my kitchen with a problem I have over and over again. When buying pork to BBQ, I like buying a whole pork scotch fillet. The problem is we never use up the whole piece in one BBQ, it is way too big. So I am always left with this piece of pork that I can't really do anything with, as it is not big enough to feed my family.
So one day while trying to figure out what I'm going to do with my leftover pork, I looked around for what I can cook with the pork, and this dish is what I came up with. It is so easy, so quick to make, my kids leave nothing. The cream lightly coats the pasta, and as my kids love pasta, all of it is gone quickly.
You could add things to it, like mushrooms, capsicums etc. But I really don't, as it is supposed to be my quick, simple, go to recipe, that I can make with things I already have in the house.
You can serve it with hot chips, mashed potato, pasta or rice. All work well with the sauce. I've also made it with chicken thigh fillets, just as good.
Serve it with a green salad, and you have a dinner that is gone quickly.

Recipe
2 tablespoons olive oil
1 onion, sliced
4 x chicken thigh fillets, sliced into bite sized pieces
OR
4 x 1-2cm thick slices pork scotch fillet, sliced into bite sized pieces
1/2-1 tablespoon vegeta
Salt and pepper, to taste
1/4 cup white wine
1/4 cup water
1/2 cup cream
1 onion, sliced
4 x chicken thigh fillets, sliced into bite sized pieces
OR
4 x 1-2cm thick slices pork scotch fillet, sliced into bite sized pieces
1/2-1 tablespoon vegeta
Salt and pepper, to taste
1/4 cup white wine
1/4 cup water
1/2 cup cream
Heat a large frying pan over medium-high heat.
Add oil, onion, pork, vegeta, salt and pepper. Fry gently for 10 minutes, stirring frequently.
Add the white wine, mix through, cover the frying pan, simmer for 5 minutes.
Add the water and cream, stir through, cover, simmer for 10 minutes, until the pork is cooked.
Serve with pasta, chips, mashed potato or rice. Serve with a green salad on the side.
