In the picture below the raspberries are crushed, only because my kids ate all my frozen raspberries and left me with a few crushed ones. I prefer them whole as it looks nicer.
I always buy an extra orange, I'd rather have more, than not enough juice.
So here is my first of many iced teas I will share, this one will be welcomed at any party.
Recipe
Serves 8
4 Raspberry, Strawberry and Loganberry flavour infusion teabags, I use Twinings
1 litre boiling water
4 small oranges
750ml bottle sparkling apple juice, chilled
1 cup frozen raspberries
1/2 cup fresh mint sprigs
Ice cubes, to serve
Place teabgs in a large, heatproof jug. Add boiling water. Set aside for 5 minutes to infuse. Remove and discard teabags. Refrigerate for 1 hour or until chilled.
Juice 3 of the oranges (you'll need 1 cup juice). Thinly slice remaining orange.
Just before serving, add sparkling apple juice, orange juice and slices, raspberries and mint to the tea. Stir to combine. Add ice and serve.
