This is something I make for my family when they want a dessert and I don't want to spend a lot of time making something. It is absolutely delicious, yet uses only a few simple ingredients.
It is made in 10 minutes, then you just put it to bake, and dessert is done. You can make as many or as little as you want. You control the sweetness, you can add different spices, it is up to you, that is why I don't add exact quantities, it is a guide. You can also add sultanas, chopped nuts, whatever you like. You can also brush some melted butter on the pastry sheets if you like.
I like to bake it on baking paper as it is less clean up for me, but if you bake directly on a greased baking tray the base does get a bit crispier, so that is up to you.
This time I actually made it as my 8 year old hates ricotta cheese, and as we were having a dessert that night with ricotta in it, I had to make him something else. He loved it, enjoyed every single bite, and wanted the leftovers for school lunch the next day.

Recipe
6 sheets filo pastry (I like Antoniou)
4 large granny smith apples, peeled
6 tablespoons breadcrumbs
4-6 tablespoons caster sugar, to taste
1/2-1 teaspoon cinnamon or vanilla sugar, to taste
50-100ml sour cream
Vegetable oil, for greasing
Icing sugar, sifted, to serve
Preheat oven to 180C/160C fan forced. Grease and line with baking paper a baking tray.
Drizzle some oil onto your prepared baking tray.
Place 3 sheets of filo on top of one another. Sprinkle with half of the breadcrumbs (the breadcrumbs are there to soak up any juices released by the apples) leaving a 2cm border around the edge of the filo.
