When passionfruit is not in season we have used tinned passionfruit, not exactly the same, but it is still good. You don't need the simple syrup in this case.
Recipe
45ml vanilla flavoured vodka
15ml passion fruit liqueur (such as Passoã or De Kuyper)
30ml fresh passionfruit juice
15ml lime juice, freshly squeezed
15ml vanilla simple syrup
60ml sparkling wine, chilled
Garnish: 1/2 passion fruit
Add all ingredients except sparkling wine into a shaker with ice and shake vigorously until well-chilled.
Strain into a chilled coupe glass.
Garnish with a passion fruit half.
