The cake can be whatever one you like. I tend to go with white chocolate, marbled or chocolate mud cakes, as they can be made in advance and stay fresh longer.
The icing must be white, so the brightness of the colour in the lollies stands out. The icing I like is a white chocolate ganache.
Once the cake is cut I love watching all the kids at the party go at the cake picking off the lollies they love.
This has been a hit every time I've made it.
Recipe
Cake:
23cm square or round cake-any cake of choice
White Chocolate Ganache or Buttercream
25cm square or round prepared cake board
Decorations:
1kg assorted bright coloured jelly lollies
1 photo-laminated or covered with contact
Bake whatever cake you like as per recipe. Place cold cake on prepared board.
Make the ganache as per recipe. My favourite ganache recipe is 1 cup thick cream to 600g white chocolate, melted together in a bowl over a saucepan of boiling water. When melted refrigerate, stirring every 10 minutes until thick enough to spread.
Spread the ganache over the cake.
Before the ganache sets, place the photo in the centre of the cake, press down gently. Make a frame with 4 snake lollies. Now use all your other lollies to cover the cake completely, pressing gently into the ganache.
Do not refrigerate this cake, as some lollies change when refrigerated, lose colour, sweat.
