My kids love these, as do I, especially since they are so easy to make. This would be great party food at a kids party, as both kids and adults would love them.
One of my kids prefers tomato sauce instead of the mayonnaise, but for me, I would not put anything but the mayonnaise, and I will mention Thomy mayonnaise is my mayonnaise of choice.
The bread I like to use are the Bakers Delight dinner rolls or a loaf of Turkish bread.
You can easily double this recipe if needed.
Give these a go, they will not disappoint.
Recipe
Makes 18
500g chicken mince
1 1/2 cups fresh breadcrumbs
1 small red onion, finely chopped
2 tablespoons chopped parsley
1 egg
2 garlic cloves, crushed
1 teaspoon finely grated lemon zest
2 tablespoons oil
1 loaf Turkish bread, halved horizontally
1/2 cup Thomy mayonnaise
2-3 Lebanese cucumbers, cut into thin strips, use a vegetable peeler
In a large mixing bowl, combine the mince, breadcrumbs, onion, parsley, egg, garlic and lemon zest. Season with salt and pepper, to taste.
Using your hands, shape heaped tablespoons of mixture into 18 even sized flattened patties, it helps if your hands are wet. Place on a baking tray lined with plastic wrap. If not using immediately, refrigerate until needed.
Heat oil in a frying pan over medium heat. Cook the patties in two batches, for 3-4 minutes on each side, until browned and cooked through.
Spread each half of the bread with mayonnaise. Sandwich together and cut into 18 even squares.
Remove the tops, place on a cucumber strip and a patty. Cover with the top bread half. Secure with a toothpick.
