Add ginger beer, to taste.
10ml lychee liqueur
10ml sugar syrup (optional)
2 slices cucumber
Ginger beer, to serve
Mint sprig, to decorate
Place the vodka, lychee liqueur, lime juice, sugar syrup (if using) and cucumber in a cocktail shaker. Use a muddler or a pestle to crush the cucumber until softened.
Add ice cubes. Shake for 30 seconds or until chilled. Add ice cubes to fill a serving glass. Strain the mixture through a fine sieve over ice in the glass.
Top with ginger beer and decorate with mint to serve.
