This has now become something that I constantly have in the fridge. If it's in the fridge he doesn't look for sugary juices, he goes straight for this.
I don't add mint, as he doesn't love it, but if I was making it for me, I probably would.
Recipe
Makes 3-4 glasses
2cm (15g) piece fresh ginger, finely sliced
1/2 cup (125ml) lemon juice
2 1/2 tablespoons honey
1 tablespoon fresh mint leaves (optional)
3 cups (750ml) boiling water
Place the ginger, lemon juice, honey and mint (if using) into a heatproof jug and pour over the boiling water. Leave to infuse for 2-3 hours or until cold.
When the mixture is cold, strain into another jug and chill in the refrigerator.
Serve in chilled glasses over ice.
