There are many fried rice recipes out there, but for us there has never been any need to try another recipe as we all love this one.
What I do most of the time, is if I'm cooking something with rice I will always make extra rice and then make this the next day. Using a rice cooker gives me perfectly cooked rice, (highly recommend getting one).
For this recipe making the rice the day before works best. Once cooked, separate rice as much as possible, place in a large tray and refrigerate overnight. If the rice is just cooked and hot, the rice though tastes good, it's hard to separate and can be gluggy.
This is great for parties and would be a huge hit with all the guests.
Recipe
Vegetable oil, for frying
3 eggs
6 slices bacon, diced
1 clove garlic, sliced into 4 pieces
4 shallots, sliced
2 cups frozen corn and pea mix, cooked
700g cooked rice, best made the day before
Soy sauce, to taste
Salt and white pepper, to taste
In a frying pan add 2 tablespoons of oil. Mix the eggs well with a fork, add to pan and make an omelette. Remove from pan and slice omelette into small pieces, set aside.
In a clean fry pan, add a tablespoon of oil and fry bacon, until cooked. Remove from pan, set aside.
Heat a large saucepan, add 3-4 tablespoons oil, add garlic and mix around, the garlic needs to brown. When well browned remove garlic from the saucepan and throw away.
In the garlic oil, add the cooked rice and mix well to ensure all the rice is mixed with the oil. Add pepper now, mix well. Add soy sauce, a teaspoon at a time, to taste. (Some people like a little, some like loads. I like the rice to still be white in colour with a hint of soy sauce). Mix well to combine, keep adding soy sauce and mixing until you have the flavour you like.
Now add the eggs, bacon, corn and pea mix and shallots, mix well to combine. Taste now, season with salt and more pepper if needed.
