This is delicious, it looks beautiful and more importantly is so easy to make.
The sugar content is up to you, it really depends on how sour your lemons are, or how sweet your strawberries are. But how I fix it, if I feel it is too sweet, just add more water, or I add a glassful of ice, then top up with strawberry lemonade and allow the ice to not only chill your drink, but also dilute it also. So add more or less sugar, that is really up to you and how you like it.
Also I recommend that you make it at least an hour or two before needed as the strawberries do become frothy (you can see it in the bottom picture). Now my kids don't care and are happy to drink it like that, tastes just fine, but if you want it as pictured above, just allow it to settle in the fridge until needed.
This is a drink that would look good served up at a party, looks beautiful, tastes even better. Give it a try.
Recipe
Serves 6-8
1 1/2 cups caster sugar
1 1/2 cups water
Juice from 8 lemons (about 1 3/4 cups of lemon juice)
450g strawberries, hulled, cut in half
4 cups cold water, extra
Ice cubes, to serve
Place the sugar and water in a small saucepan, place over a low-medium heat, and stir until the sugar has dissolved. Turn off the heat, allow to cool slightly.
Place the strawberries and lemon juice in a blender and blitz until smooth.
Now you can strain the strawberry mixture, but I don't bother as my kids don't care about the tiny strawberry seeds, and the seeds tend to settle at the bottom of the jug anyway.
Pour the strawberry mixture and the sugar mixture into a large jug or pitcher, stir to combine. Pour in the extra 4 cups of water, stir to combine. Refrigerate until needed.
When serving, serve in glasses with ice cubes.
