This is not a big cake, but it is moist and it is tasty. We all had it with ice cream (Soy Ice Cream for those that are Lactose Intolerant), so it served everyone, I got great reviews, people went back for seconds.
So I have added it on to my site as I know how hard it can be to find recipes that taste nice, once you start taking certain ingredients out of a recipe. And this one is made with pantry items and is a very cheap and super quick to make.
I have not tried it but the recipe says you can use this mix to make muffins. Use a 12 hole muffin tin and bake for 15-20 minutes.
Recipe
Serves 12
1 1/2 cups plain flour, sifted
3/4 cup caster sugar
1/3 cup cocoa powder, sifted
1 teaspoon salt
1 teaspoon bicarbonate of soda
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/3 cup olive oil
1 cup water
Preheat oven to 180C.
Grease and line the base of a round 20cm cake tin with baking paper.
In a large mixing bowl add the flour, caster sugar, cocoa powder and salt. Whisk it to combine.
Place the bicarbonate of soda on top, add the vinegar, vanilla extract, oil and water. Whisk to combine, do not over mix.
Pour mixture into your prepared tin, bake for 30-35 minutes or until just firm to the touch. It will feel soft and spongy when pressed.
Cool in the tin for 10 minutes, before cooling on a rack. Once cooled, dust with icing sugar.
