This is the best mud cake recipe ever.
After many, many attempts using various recipes to perfect the mud cake, I have to say that this is my favourite Chocolate Mud Cake. I will even say this is the Best Ever Mud Cake.
It is not as heavy as some mud cakes I have tried. It is light and fluffy, yet chocolatey like a mud cake should be.
I quite often make this when making party cakes, and I probably will not try any other mud cake recipe again, I am totally happy with this one.
Mud cake for me needs to be served with ice cream, it is essential for a completely divine taste sensation.

Recipe
Serves 10-12
Preparation Time: 30 minutes
Total Cooking Time: 2 hours
250g unsalted butter, chopped
250g dark chocolate, chopped
2 tablespoons instant coffee powder
150g self raising flour
150g plain flour
1/2 cup (60g) cocoa powder
1/2 teaspoon bicarbonate of soda
2 1/4 cups (550g) caster sugar
4 eggs, lightly beaten
2 tablespoons oil
1/2 cup (125ml) buttermilk
Chocolate Ganache:
250g dark chocolate, chopped
1/3 cup thick cream
Preheat the oven to a warm 160C. Grease a 22cm round cake tin and line with baking paper, make sure the paper extends 5cm above the cake tin.
Put the butter, chocolate, coffee and 3/4 cup (185ml) water in a medium sized saucepan. Over low heat, stir until all is melted and smooth. Remove from heat.
Spread ganache over a cold cake.
