This is a dessert that I serve when we have a light dinner. It can be served hot or at room temperature, it is loved by both my family and friends.

1kg ricotta cheese
Grated lemon rind from 1/2 of a lemon
Pinch of salt
1/3 cup caster sugar
1 teaspoon vanilla sugar
1/3 cup sultanas, optional
250g unsalted butter, melted
1 packet filo pastry, I like Antoniou
4 large Granny Smith apples, peeled, cored and thinly sliced
1/4 cup caster sugar, extra
1 teaspoon ground cinnamon
100g walnuts, roughly chopped, optional
300ml sour cream
Preheat the oven to 180C/160C fan forced.
In a large bowl put the ricotta, eggs, lemon rind, salt, caster sugar, vanilla sugar and sultanas. Mix well to combine.
