I double the recipe to make 2 bars, one to share with friends, the other to keep for my family as they love it. You can make it up to 4 days ahead of time.
Recipe
Makes 15 pieces
60g unsalted butter
52g Cadbury cherry ripe, finely chopped
250g dark chocolate, chopped
1 egg, lightly whisked
55g caster sugar
45g brown sugar
75g plain flour
100g red glace cherries
125ml (1/2 cup) sweetened condensed milk
65g desiccated coconut
4-6 drops red food colouring (optional)
Preheat oven to 160C. Grease and line with baking paper a 22cm x 7.5cm (base measurement) bar pan. Make sure the paper goes up two opposite sides, so bar slides out easily once baked.
Place a medium sized heatproof bowl over a pan of simmering water. To the bowl add the butter, cherry ripe and 120g of the dark chocolate. Stir until the chocolate melts. Set aside to cool slightly.
Whisk into the melted chocolate mix the caster sugar, brown sugar and egg. Add the flour, stir until smooth. Pour the brownie mixture into your prepared pan. Bake for 30 minutes. Cool slightly.
Finely chop half the cherries. Cut the remainder of the cherries in half. Combine cherries, sweetened condensed milk and coconut in a bowl. Stir in food colouring, if using. Spread cherry mixture carefully over brownie base, smooth surface. Bake for 20-25 minutes or until light golden. Set aside in the pan to cool completely.
Melt the remaining dark chocolate in a heatproof bowl, over a pan of simmering water. Stir until smooth. Reserve 2 tablespoons of the chocolate , pour the rest of the melted chocolate all over the top and sides of the bar.
Drizzle the reserved chocolate across the bar to create lines like a cherry ripe has. Set aside until the chocolate sets. Slice.
