Coleslaw with a Vinegar Dressing
This is the coleslaw of my youth. Minus the apple, my mum never added apple. a simple oil and vinegar dressing was something that went with so many dishes. It was served at parties, at barbecues, with schnitzel, the list really does go on.
My mother would never have measured the dressing, she just added in the oil and vinegar to taste. So although I have given you measurements, how I like it, you may need to adjust it to suit your taste buds.
I made this to go with pulled pork, I made a mayonnaise version to, but two of my kids don't like mayonnaise so I made this version for them. My kids love the addition of apple.
Double or triple the recipe. Make as much as you need.
Keeps in the refrigerator for days.
Use just white cabbage or a combination of white and purple.
Leave the peel on the apple.
You can add shallots or sliced red onion, if you like, my mum did. She even added coarsely grated carrot.
Simple, fresh, tasty and goes with so many things.

300g Cabbage, shredded
1 red apple, unpeeled, cut into long matchsticks
1/4 cup parsley, chopped
2/3 cup extra virgin olive oil
6 tablespoons apple cider vinegar
Salt and Pepper, to taste

Combine oil and vinegar in a bowl, whisk to combine. Add cabbage, parsley and apple, season and mix well.
