Pavlova Wreath

Last year I made the Pavlova Christmas Tree, this year I decided to make a Christmas Wreath.

It was beautiful, when I brought it to the table my guests thought it looked amazing.

And can I say it tastes as good as it looks. Once served it is gone very quickly.

Now I decorated with a combination of fresh and frozen berries. Although I live in Australia and it is summer for Christmas and you can find fresh berries everywhere, I like the addition of frozen berries as I love the frosty colour they have, and I also love biting into a frozen berry. So I use fresh strawberries, but all the other berries are frozen.

Take your time putting on the fruit, make it look pretty, it is so beautiful when done properly. And don't skip the mint leaves as they add such a beautiful colour and subtle flavour to the cream, even if you don't eat the actual leaf.

Make ice cream, custard, lemon curd or Portuguese custard tarts with the egg yolks, I hate waste.

This is really easy to make, I'll give you all the instructions you will need, make this dessert, it will not disappoint.

Recipe

Serves 6-8

4 egg whites
Pinch of salt
1 cup caster sugar
2 teaspoons cornflour
1 teaspoon white vinegar
500ml thickened cream, whipped
250g fresh strawberries, to decorate
Your choice of frozen berries, to decorate
Fresh mint leaves, to decorate


Preheat your oven to 150C/140C fan forced.

Now I used a pizza tray (which was the perfect size) lined with baking paper, but if you are using a normal baking tray, get a sheet of baking paper, then draw a circle 25cm in diameter. Line the baking tray with the baking paper, (put the traced side down, you don't want ink on your pavlova).

I like to use a free standing mixer (but you can use a hand held one). Place the egg whites and salt in a large bowl of your mixer and beat until soft peaks appear. Slowly add in the sugar, a tablespoon at a time, beating well after each addition. After all the sugar has been added, just scrape down the side of the bowl once and beat until you have a mixture that is thick, glossy and all the sugar has dissolved.

Fold in gently the cornflour and vinegar with a metal spoon.


Place even sized dollops of the meringue along your traced circle, creating your wreath (if using a pizza pan, keep 2cm in from the edge of the pan). Using a spoon, swirl the meringue gently to fill in gaps between the dollops, and to make the wreath (roughly) even in width and height, it does not need to be perfect.

Bake for 40 minutes in the centre of your oven, it will be a pale cream colour and look crisp on the outside. Reduce the oven temperature to 120C and bake a further 10 minutes. Turn off the oven, open the oven door slightly (you can place a wooden spoon in the opening to keep it open) and allow the pavlova to cool completely in the oven, it takes approximately 2 hours. The pavlova may crack a little, don't panic, it doesn't matter as the cracks get covered by the cream and berries.

Just before serving, whip the cream until firm peaks, don't over whip or it will be like butter, you want it thick and creamy and luscious.

Gently place the cream on the wreath. Position the mint leaves around the wreath.

Slice the fresh strawberries into thin slices.

Now I do add the berries on one at a time, treat this like a little piece of art.

Start with the strawberries, position them around the wreath, then top with whatever other frozen berries you love.

Serve immediately.

Christmas Cranberry Crush

This is so good, a alcohol based slushy, divine.

It is very refreshing, very easy to sip on, and perfect for a warm Australian Christmas.

I served it up in a cocktail glass, but you can serve it in a short tumbler.

Give this a go, it is truly a lovely drink.

Recipe

Recipe adapted from Christmas Cocktails Cards

Serves 6 

250ml vodka
250ml cranberry juice
200ml cold sugar syrup
6 large limes, juiced


In a large jug add the vodka, cranberry juice, sugar syrup and lime juice, mix well.

Pour into a large container, cover and freeze overnight.

Once frozen, stir and spoon into glasses.

Serve with a wedge of lime.

Watermelon Granita

My family is on a granita frenzy, we love them. And the fact that they are so easy to make, makes me want to keep making them.

This was another hit with us. The beautiful pink flakes of ice, that melt in your mouth on contact, brilliant. The addition of lime to contrast the sweetness of the watermelon, brilliant.

This dessert is beautiful to see and eat, very refreshing. It is amazing how something so simple can be so pleasing to eat.

For a cocktail version add 5 tablespoons of vodka, tequila or white rum to the mix. Serve in margarita type glasses that have the rims dipped in sugar. (This I will try next)

Recipe

150g caster sugar
150ml water
1.75kg watermelon
Finely grated rind and juice of 2 limes
Lime wedges, for serving

Place the sugar and water in a small saucepan. Bring to the boil, but don't boil, stir until the sugar has dissolved. Pour into a glass bowl, cool, then chill.

Cut the watermelon into quarters, remove most of the seeds. Chop up the flesh into smaller pieces, place the flesh into a food processor and process until smooth. You can use a blender, do it in batches.
Strain the watermelon puree through a sieve into a plastic container that has a lid. Add the chilled syrup and lime rind and juice, mix well.

Cover and freeze for two hours until the mixture around the sides has started to set and thicken. Using a fork scrap the set ice off the sides, give the mixture a good mix.

Place back in the freezer, now every 30-60 minutes you will need to stir the mixture using a fork until the granita has set, with the ice crystals forming throughout the granita. Stop when you are happy with the consistency.

Scoop it into serving bowls, add some lime wedges.

Cream of Asparagus Soup

I had some asparagus in the refrigerator and my husband asked if I would try to make cream of asparagus soup. I have never made it, so I went about looking for a recipe.

I found a recipe I thought would be good, but I didn't have enough asparagus, but I made it anyway, it was Delicious. Took me by surprise how something so simple could taste so great. With 2 bunches, it was slightly runnier than I would have wanted, but the flavour was amazing.

The following day I was at my local green grocer and saw asparagus was on sale if you buy 3 bunches, so I did. Then I went and made the soup with 3 bunches. Delicious again, flavour amazing. But I still felt I wanted to try it with a fourth bunch.

So the next day I bought 4 bunches of asparagus soup, made it and absolutely loved it. It was thick and luscious, absolutely divine.

I found whether using 2,3 or 4 bunches of asparagus the flavour is amazing, the soup just gets a bit thicker with the more you add. This is so simple, yet so good.

My family has stated this is one of their absolute favourite soups. It really is that good. 

Recipe

Serves 4

4 bunches asparagus
1 onion, chopped
2-3 tablespoons unsalted butter
4 cups salt reduced chicken stock
1/4 cup thick cream
Salt and pepper, to taste


Cut the tips from 12 asparagus, about 2-3cm long. Halve the tips lengthwise if they are thick. Reserve for garnish. (Now this part is optional, if I am making this for my family I wouldn't bother, as they don't care for garnishes, but for guests I would make the effort).

Cut 1-2cm off the ends of the asparagus and discard as it can be tough and woody. Now cut all the remaining asparagus stalks into 1-1.5cm pieces.

Heat a medium sized saucepan over a low to medium heat, add butter and onion, sauté, stirring regularly, for 4 minutes, or until the onion softens (Reduce the heat if the butter and onions look like they are colouring too quickly).

Add the asparagus pieces, sauté, stirring regularly, for 5 minutes. Season with a little salt and white pepper.

Add the chicken stock, bring to the boil, simmer for 20 minutes, or until the asparagus is very tender.

While the soup is cooking, bring a small pot of salted water to the boil, cook the reserved asparagus tips for 3-5 minutes, until just tender, then drain.

Now if you want the soup to be perfect, puree the soup in batches in a blender until smooth, place pureed soup in a bowl, then return to the pan once all is blitzed. I prefer to just use a stick blender straight in the pot, blitz until smooth (I always miss a piece of asparagus, but my family love that). Either way be careful with hot liquids. The soup should still be really hot, if not, bring back to a boil. Turn off the heat, add the cream, and stir through to combine. Season with salt and pepper, if needed.

Serve immediately and garnish with asparagus tips.

Macaroni Eggplant Cake

I love eggplant, I love it a lot. This dish for me was delicious, my whole family loved it.

The pasta filling on its own was delicious, but adding the eggplant was amazing. It is like you are eating a lasagne without the bechamel, but with the cheese it makes you feel it is still there.

When I made this for the first time when my kids were all under 10, my older two kids would not generally eat eggplant on its own, so they chopped it up into their pasta and loved it. My youngest didn't want the eggplant, but that was okay as I was happy to take it. Some foods they are more likely to like later on.

Well later on happened, two of my kids are now in their 20s and my youngest is 17 and now they all absolutely loved this , eggplant and all. One thing I took out of the recipe was the peas, I just don't love them and don't feel they are needed, but if you love peas, keep them in.

This is a delicious family meal that suits both adults and kids, is super yummy and will definitely be made again in my house.

1 clove garlic, crushed
500g pork and beef mince
2 tablespoons tomato paste
400g can tomatoes

125g macaroni
1/2 cup frozen peas, optional
1 cup freshly grated mozzarella cheese
1/2 cup freshly grated cheddar cheese
1 egg, beaten
1/2 cup freshly grated parmesan cheese


Grease and line the base of a deep 23cm round springform tin.

Arrange eggplant on trays, sprinkle with a little salt. Allow to stand for 20 minutes. Rinse well. Pat dry with paper towels. (This only needs to be done if your eggplant, when sliced, has a lot of black seeds inside).

Heat 2 tablespoons of olive oil in a large frying pan. Cook the eggplant in batches in a single layer until golden on each side. They need to be cooked and pliable. Add more oil as required. Drain on paper towels.

Make the sauce: Add onion and crushed garlic to the same pan and stir over low heat until onion is tender. Add mince and brown, breaking up any lumps with a spoon or fork as it cooks. Add the tomato paste, stir for 30 seconds, then add the tinned tomatoes, salt and pepper and stir well. I like to rinse the tomato tins with about 1/3 cup water and add that to the sauce. Bring to the boil, reduce heat and simmer for 20 minutes or until thickened. You don't want a wet sauce, it needs to be thick. Set aside.

​Add macaroni to a large pan of rapidly boiling water and cook until just tender. Drain and place in a bowl, drizzle with a little olive oil, if you are not using it straight away, to ensure pasta does not clump together, if you are using it straight away, no need to oil it.

In a large bowl, place the peas, if using, macaroni, mozzarella and cheddar cheeses, egg and half of the parmesan. Use a spoon to mix, set aside.

Preheat oven to moderate 180C/160C fan forced.

Place an eggplant slice in the centre on the base of your prepared tin. Arrange three-quarters of the remaining eggplant in an overlapping pattern to completely cover the base and sides of the tin.​

Sprinkle the eggplant with half of the remaining parmesan cheese.

Combine the mince mixture with the macaroni mixture, mix well to combine.

Carefully spoon the filling into the eggplant case, packing down well.

Arrange remaining eggplant slices, overlapping, over the filling. Sprinkle with the remaining parmesan cheese.

Bake, uncovered, 30-40 minutes or until golden. ​

​Allow to rest for 10 minutes before unmoulding onto a serving plate. To unmould release the sides of your springform tin, place a rimmed plate on your eggplant, then quickly flip the over your 'cake' using your cake tin base to assist. Remove base and baking paper.


Serve with a salad, if desired.

Homemade Lemonade

I couldn't sleep one morning, woke at 3am, and started flicking through food magazines I have. I came across this homemade lemonade recipe, and as I had over the week accumulated a large quantity of zested lemons, I thought I'd give this a go, so I could use the juice as well, not just toss them out.

This is so easy, and tastes so refreshing. I am keeping the sugar quantities the same as in the original recipe, but you can decrease the amount slowly if you like, I will next time, just to see how it tastes.

I loved it, my kids loved it. Have it with still water or sparkling, it very refreshing, and has to be better than store bought cordials. And for me, no waste, I will never throw out a zested lemon again.

Recipe

1 1/2 cups caster sugar
1 cup water
1 cup freshly squeezed lemon juice


Put the sugar and water in a medium saucepan, stirring regularly, over medium heat, bring it to the boil.

Once boiling, remove from heat, allow to cool.

Stir in the lemon juice, (I made sure there was no pips, but I didn't strain it, but you can strain it, if you like).

Pour into sterilised jars or bottles and refrigerate until needed.

Pour a little in a glass, add some ice, top with still or sparkling water, to serve.

Potato Gnocchi

My family loves gnocchi, just not the packet ones, so I have been trying out recipes for a while now. I came across this Donna Hay version, and have stopped looking for other recipes. They are brilliant, they turn out perfectly every time. 

It is a very simple recipe, by far the easiest way I have found to make gnocchi. I like to get the kids to help out, when they do, they aren't perfectly shaped but no one in my house cares if they are not perfectly shaped, but they all love the flavour and texture.

The recipe can easily be doubled. Serve with whatever sauce you love.


Recipe

Adapted from a Donna Hay recipe

Serves 6

1kg potatoes
Rock salt, for baking
1/2 cup (40g) finely grated parmesan (optional)
2/3 cup (100g) plain flour, sifted
Sea salt and cracked black pepper, to taste
2 egg yolks

Preheat the oven to 180C.

Spread the rock salt to cover the base of a large baking tray. Place the potatoes on the rock salt and bake for 1 hour or until the potatoes are soft and cooked through. Allow to cool slightly. (I allow the salt to cool completely, then pour it into a container to use again next time).

Cut the potatoes in half. Place the potato half, flesh side down into a ricer, then press the potato half through the ricer into a large bowl, discard skin. Continue with all the potatoes. If you don't have a ricer, buy one today, they are brilliant for mashing potatoes.

While the potato is still hot, add the parmesan (if using), flour, salt and pepper and mix to combine. Add the egg yolks and keep mixing until the mixture comes together. Lightly flour a work surface and knead the potato dough for 1 minute until you have a soft dough.

Divide the dough into smaller workable balls. Roll into long sausages (you get to determine how big or small you want your gnocchi). Cut into 1.5cm long pieces and place on a lightly floured tray. Cover with a tea towel if you are not using them straight away. Also at this stage you can put the whole tray in the freezer, once the gnocchi are frozen, you can transfer them to freezer bags, to use another day.

Bring a large pot of salted water to the boil. Cook the gnocchi in batches for 3-5 minutes or until firm and floating to the surface. I usually cook them until they float to the surface plus 1 minute once they have floated to the surface. Remove with a slotted spoon. Mix the gnocchi with a little of whatever sauce you are serving it with straight away, so they do not stick to one another.

Tomato and Basil Bruschetta

This is so light, so fresh, I just love it!

This is very simple to make.

I love to serve this when I have people over for lunch, on arrival I serve this with drinks. It is also a great way to use up leftover basil that I bought for another recipe, I simply make this and have it in the refrigerator as a healthy go to snack.

The flavour of the basil, for me, mellows with time, so if you make it early it will be milder in flavour. I like to make it at least an hour earlier than needed, so the flavours develop, but it can easily be made 2-3 hours earlier.

I like the Italian Bruschetta Bread for this, but breadsticks are good also. You can even bake flour tortillas, cut into wedges and serve as a crisp cracker on the side.

Take your time when dicing, it doesn't have to be perfect, but it is nicer if not too chunky.

If you are looking for a nice, fresh, healthy snack to serve with drinks or as an entree at your next party, give this bruschetta a try.

Recipe

Topping is enough for 1 breadstick

Makes 25

30cm breadstick or Ciabatta loaf
2-3 cloves garlic, peeled
Extra virgin olive oil, for brushing
Tomato and Basil Topping:
3 Roma (egg) tomatoes, seeded, chopped finely
1 small (100g) red onion, chopped finely
1/4 cup finely shredded fresh basil
1-2 tablespoons extra virgin olive oil
Salt and freshly ground black pepper, to taste


Combine tomato, onion, basil, extra virgin olive oil, salt and pepper in bowl, mix well to combine.

Preheat the oven to 180C/160C fan forced.

Trim the ends from the bread, and slice into 1 - 1.5cm slices. Place the bread slices on a baking tray and bake for 10 minutes or until browned.

Rub garlic over one side, brush same side lightly with extra virgin olive oil.

Spoon tomato and basil mix on to toasts, serve immediately.

Crunchy Chocolate Truffles

This recipe popped up on my face book page and they looked so good, I had to give them a try. They are so quick and easy to make, and the kids simply loved them.

Great as a little lunch or after school treat, and not as bad for you as some of the packaged treats we give kids. 

One tip I would give though, is crush the biscuits in a bag by smashing them with a rolling pin, you get coarser crumbs, therefore adding more crunch. The first time I made them I used a food processor, the crumbs were finer and produced drier truffles.

If once you have mixed it all together the mixture is too wet to roll. Just refrigerate them for 10-20 minutes until the mixture is easy to roll.

These are suitable to freeze, but in my house I don't see this happening.

You can add nuts or milo to the mix if you like, I haven't yet. My husband who loves them to suggests adding some rum. 

Quick and easy to make, give these a try soon.

Recipe

Makes 25 truffles

250g plain biscuits, crushed
3 tablespoons cocoa powder
1/4 cup desiccated coconut
395g sweetened condensed milk
1/2 cup desiccated coconut, extra for coating



In a large mixing bowl, add the crushed biscuits, cocoa, coconut and sweetened condensed milk. Mix well to combine.

Put the extra coconut in a small bowl.

Roll a measured tablespoon of the biscuit mixture into a ball, roll in the extra coconut to coat, place in a container. Repeat until all the biscuit mixture is used up. Refrigerate to firm up.

Jam Macaroon Tart

"This tart took me by surprise, I didn't think I'd like it as much as I did"
Why did I make this tart, because it was on the back of the Wagon Wheel Slice I made.

I am not a fan of jam really, but I still wanted to make it, so I did. For this tart I did not know what to expect in terms of flavour. I had no idea if I would like it.

Well, it surprised me, that I actually do like it. The first bite was it's okay, but with every bite I took, I began to like it more and more. I love the biscuit base, I had never used Nice biscuits in a base before, truly delicious. I loved the coconut top, it was chewy and nice. And I loved the jam and frangipane filling. Put it all together it was a good tart, one I would make again.

My husband and son who love jam, absolutely loved this dessert. My husband actually is not a big dessert eater and he really went at this one.

It is slightly sweeter than my normal desserts, but still not overly sweet. If you love jam and you love coconut you should try this, as if I like it, you will to. Another reason to make it besides it tastes great, is it is simple and cheap to make.

With regards to the jam, the only jam I like is Rose's Raspberry Conserve, but use any jam you like. If the jam is thick, you may need to warm it up as the frangipane is soft and hard to spread the jam over.

Recipe

Recipe adapted from Super Food Ideas magazine

Serves 10

Base:
90g unsalted butter, melted
250g plain sweet biscuits (I used Nice)

Filling:
130g unsalted butter, softened
1/2 cup caster sugar
2 eggs
1 cup almond meal

1/2 cup raspberry jam

Topping:
2 egg whites
2 cups shredded coconut
1/4 cup caster sugar

Preheat oven to 180C/160C fan forced.

For the base: Place the butter in a heatproof bowl, place bowl over a small saucepan of simmering water until the butter has melted, allow to cool 5 minutes.

Place the biscuits in a food processor and blitz until you get a fine breadcrumb consistency.

Add the melted butter to the biscuits, stir until combined. Pour the mixture into a 3cm deep, 24cm round loose-based fluted flan tin. Press it up the sides and on the base evenly. (It might feel like you need more butter, but you won't it will hold). Refrigerate for 10 minutes. 

For the filling: Using an electric mixer, beat the butter and sugar in a bowl until light and fluffy. Add the eggs, beat until combined. Fold in the almonds. Spread the almond mixture over the base carefully. Smooth the top. Bake for 20-25 minutes until golden.

For the topping: In a medium sized bowl add the egg whites, shredded coconut and sugar. Mix to coat all the dry ingredients well with the egg white.

Carefully spread the jam over the almond filling (it may help to heat the jam a little if thick and cold). Spoon over the coconut mixture. Bake for 25 minutes or until set and golden.

Carefully remove from the tin by placing a glass until the tin, then dropping the side of the tin down. Leave the tart on the tin base.
